The other day I made brownies and naan (Richa's avocado recipe). I was so excited that I finally stopped being too lazy to make naan and they turned out gorgeous, but my coconut oil was off and that kind of ruined them for me. I'll definitely try again now that I know how easy it is, though!

The tiramisu cupcakes from Vegan Cupcakes Take Over the World. Except the cream cheese I bought (Tofutti Creamy Smooth) tasted vile, so I made them with coffee buttercream instead of cream cheese frosting. I've been wanting to make these for a while, but since they don't keep I waited for an opportunity where I could get other people to eat them. Brought them to my mum for mother's day and they were appreciated. It's a bit weird bringing cake to my mum who has turned in to a baking machine since she retired, but it was nice that I got to eat some sweets while we were there.

I made fudgy brownies from the 100 Best Vegan Baking Recipes, they were phenomenal. The recipe used whipped flax to get the shiny cracked top. Perfecto.

coffee cake. the recipe i was working from only asked for cinnamon in the topping and i thought, "it needs way more spices than that!" so i through in some cardamon, allspice, and clove in the topping as well as the batter. i LOVED it but not sure how similar that is to genuine coffee cake? probably not at all? it's been years since i've had it

i also made pizza (the dough=baking, right?) from Isa's Pizza Dough, a Novel recipe. lard that makes the best pizza dough ever.

Chocolate Galaxy Banana Cheesecake from VPITS. I love that pie. Only issue was that my chocolate chips didn't melt at all, no matter how long I heated them up in the double boiler. I got so frustrated by this soft ball of chocolate, I was about to throw it out. My boyfriend added some oil and it magically melted, but I didn't trust the result taste-wise, so I used a leftover bar of dark chocolate with hazelnuts. It wasn't nearly enough, but whatever, the result was good as I remembered.

Chocolate cake + peanut buttercream + peanut butter newman-o's + ganache. For his face, I rolled out the insides of the cookies I crushed up for his fur. That stuff makes for pretty good fake fondant! We're having a monkey themed baby shower at work tomorrow.

I made a very easy chocolate loaf cake ... recipe from who knows where as it is on a scrubby scrap of paper ... a snap to make & works sliced for the work week ... mix 1/2 c flour (I use a mix of whatever is at hand), 1 c sugar (yikes!) 1/4 c cocoa powder, baking soda, 1/3 c veg oil, 1c water then bake at 350F for 45 minutes ...

I forgot the salt so they were a little meh, but that was easily remedied by spreading them with peanut butter before eating. I thought it was hard to cut them into neat squares, but I guess I need to practise (poor me...).

Last night, I made the Brooklyn Brownie Cupcakes from VCTOTW. So delicious! I usually don't love fruit & chocolate together, but the black cherry preserves really enhances it.

I'm about to bake the macadamia-ginger-coconut cookies (whatever they're called, from VCTOYCJ), as well as some kind of scones. Maybe vanilla scones with strawberry chunks. Breaking in the new oven!

I have a ton of leftover applesauce, so I made the spice cake from Yellow Rose Recipes tonight in mini-loaf pans. Even without frosting it's fantastic.
