Chocolate fudge slice. It was someone's birthday at work on Friday and there was non vegan chocolate cake and slice sitting next to me all day so I was craving something chocolatey.

Fudgy Cocoa Mint Cookies from 'Cooking With PETA' also their Chocolate Chip Brownie Bars.

I also made the Raspberry and Almond Tart from Colin Spencer's Green Gastronomy ... I hesitated as it
demands 1 lb / 450g of fresh raspberries and the price here seemed a bit 'ouchy' to me ...

I went to a potluck the other day and made the mud pie from VPITS (I forget the whole name but it's the one with kahlua & chocolate liqueur, except I ran out of kahlua and made up the rest with Jack Daniel's), and someone said it was the best chocolate cake of her whole life! Then I had a chocolate-hating weirdo friend over and made a fruity thing with mango & raspberry and a biscuit topping. It was so good and I don't really even like fruit desserts.

I made the Mexican Hot Chocolate Snickerdoodles for the first time yesterday to take to a housewarming party, they were a huge success! I could hear the highly gratifying sound of about 12 people saying "mmm!" at the same time! And some people tried a bite of one and then immediately took a second one.

Sorry realised that wasn't very clear. I don't mean they took a second bite, I mean they grabbed another cookie straight away!

I made a mixed berry pie yesterday! Except that I've probably made fewer than ten pie crusts from scratch in my life, so it was kind of stressful and the pastry didn't behave and it looks a little ugly. But there's a lattice top on it!

On today's list: peanut butter granola (SOOOO good), chocolate chip cookies, and probably banana bread (lots of bananas ripening, and we've got fruit flies so I want to use them up!) to keep us in baked goodies/lunch box fillings/breakfast/etc for the week.

My most recent baking:
Lemon Thyme quick bread, 500 Vegan Recipes - I think it's the 4th time I've made this particular loaf. It is perfect and holds up well to my tampering (I like to use olive oil, and sub things like orange essence and cornmeal).

Marbled Poppy seed & Kirsch-marzipan cake, from Seitan is my Motor - Like everything Mihl does, this was amazing! Absolutely perfect texture. I baked it as a bundt cake and it looked so pretty. Recipe is here: http://seitanismymotor.com/2010/03/marbled-poppy-seed-cake/

Chocolate gluten freedom cupcake, VCTOTW - My first time baking gluten-free cupcakes, and I really liked them. I added mint extract to the cupcake and used the icing idea from the other mint choc cupcake in the book. I took these to a family gathering and everyone from my cousin's 2.5-year-old up to my 85-year-old grandma liked them. Success!

I am cooling carrot cake muffins awaiting maple glaze from Ms. Cupcake. I'm thinking I did something wrong (besides leaving out the walnuts) in my diy self-rising flour ratio because they look...odd.

I made the summer fruit buckle cake from VPITS with my mom a couple days ago and am about to make another one for my guy and I to share for breakfasts. It's nice to have someone that will gladly take half (or more!) of what I bake, so I can enjoy baked goods without feeling like I have to eat a whole batch of stuff. It's also just nice baking for someone :)

I keep making the zucchini banana bread from the blog. It's all basic ingredients, and it's a perfect base to play with - like subbing hemp for the nuts, or 1/2 cup wheat germ for 1/2 cup of the flour, or chocolate chips instead of raisins.
