I made a gingerbread loaf cake the other day - no recipe, just winged it. It came out great, and of course I have no idea what went into it.

Yesterday I made the Deluxe Chocolate Brownies from VCIYCJ for the first time, the bf and I scarfed them down all in one day. They were a bit undercooked in the middle though, because I had to use a slightly smaller pan that the recipe called for so they were thicker but I didn't adjust the baking time. Oh well, next time.

I had an abundance of peaches! I made a triple batch of these Brown Sugar Peach Muffins into loaves. I made some changes because of ingredients. I used orange juice in place of almond milk (a girl i work with has a nut allergy), and apple butter in place of apple sauce (i used a bit less apple butter since it's so concentrated). It ended up making 4 loaves that are in the oven right now! I'm going to bring three loaves to work. Anyway, the batter with the orange juice tastes SO good. I'm really excited about this.

WHAT! how did i miss that recipe??? i have an abundance of nectarines, so looks like those are on my agenda for the weekend. mm mm.

(back to topic, i made a foccaccia to end all foccaccias last week. large slices of garlic and an extra rise to make it fluffy and gorgeous, and accompanied by an italian salsa made of three kinds of tomatoes, basil, pepper, garlic, and oil. it was amazing.)

I made isa's Chocolate Yogurt Bundt Cake and my own Low-Fat Chocolate Cake yesterday. And I didnt really like either for some reason, even though I've made both before... :(

I have no knead bread in the oven right now. I used all semolina flour and it looks like a big dumpling after 30 minutes in the oven. I do not have high hopes!

Maybe your flour is old? That happened to me a while back, and it made a cake taste SAD. Now I keep my flour in tubs in the fridge, and my cakes are happy. :)

Actually that's possible. I made it at my boyfriend's place. We have tiny fridges though (someone on here once told me it's like a dorm room fridge in the US?), I have trouble getting stuff in there as it is.

Bread update: turned out tasty with a nice chewy/crunchy crust, although it didn't rise much. Overall, a success!

PPK brown sugar peach muffins! even without spelt flour (half white and half white whole wheat) they are pretty damn good.

Today I made choc chips scones (from VWAV) for the office. It is the very first time I have baked for this bunch of colleagues and I'm a little nervous. But it's hard to mess up those scones so I hope they go over ok and people aren't like "vegan baking sucks".

The latest thing I made (on Labor Day) were the homestyle potato rolls from VCON. I make those ALL THE TIME. I make a dozen and freeze them and as soon as they run out, I have to make some more. They are my go-to bready thing for soups and salads or to round out a meal.

The weekend before, I'd made rosemary chocolate chip cookies.

I'm sure they will love them. I haven't tried that particular recipe, but I've made the orange scones a few times (LOVE THEM--love orange in baking) and yum! I know that's a solid recipe and I'm pretty sure the choc chip scone would be, too. If it's just the regular scone recipe with addition of choc chips, I know it works as I make those for the strawberry (I use raspberries) shortcake recipe--another recipe I make often as I love it, it's super easy and everyone I've served it to seems to love it. I just remember one time I overworked the dough and the scones were a bit tough but I just keep in mind to blend just enough to mix the ingredients and they'll turn out tender and fine.

I'm baking Donauwelle Kuchen from Mihl's blog. It's in the oven right now, and the buttercream's cooling. Can't wait to try it. My partner's taking some over to his dad's place, and his dad's partner is German. I'm excited to see what she thinks of it!

Later, I'm going to pop a batch of granola into the oven, as well as prep some ciabatta dough to bake tomorrow.
