Thanks to everybody for the suggestions about the challah. I will probably try it once with the banana, and if it tastes too much like it, I will turn that batch into French toast or bread pudding or something. Then I'll just try again with sweet potatoes! It will be mine. Oh yes, it will be mine.

I have made Peter Reinhart's challah successfully just by substituting silken tofu for the egg. If you decide to try another recipe, I highly recommend that one.

i couldn't get the cute little foldover pockets from the second link to work, so i made them like big old pierogies instead. the kid is eating them like they're going out of style, so something is right. (didn't use the scramble recipe from either one, i made it myyyyyyy waaaaaaaay)

Yesterday I made calzones with kale, roasted eggplant and yellow squash, and tofu ricotta. Then I made chocolate chip cookies. The calzones were great! The cookies were just ok.

I made a cake for my friend's birthday that actually turned out really well! It was a gluten-free raspberry cake with coconut jasmine icing. Everyone at the party seemed to really enjoy it - success! Most people even chose that cake over the back-up fauxstess cupcakes I brought in case of epic failure.

I had the day off work today. I've made VWAV pumpkin muffins (filled with Biscoff spread...got the idea from a non-vegan recipe on Pinterest), Vegan Brunch bagels, and the PPK's chewy chocolate chocolate chip cookies (although the batter was thinner today than usual...not sure why).

I think I've finally found my perfect scone recipe! So light and fluffy. This morning I made a batch of currant scones and a batch of cinnamon/maple scones with a maple glaze.

I have peanut butter banana bread in the oven now. Next up, whole wheat sandwich bread. After that, whole wheat no knead bread. I don't know what else to bake, but since the oven is on and I'm bored, I might make something else too.

I made a ginger, chilli and sultana loaf with the leftover solids from making ginger beer a couple of weeks ago. It was so delicious that I made another similar loaf with the dregs of the ginger beer and added grated ginger, sultanas and molasses. I was never a fruit loaf fan as a child, at all, and now I really like the stuff!

What was interesting is that I normally use quick yeast to make bread. This was the same yeast but it'd been sitting in the ginger beer in the fridge for a while. It think there was less of it, or the cold start affected it but it took a lot longer than normal to rise, but the flavour was so much better! It's a lesson to me to not be so impatient, add less yeast and let the flavours develop over a longer period of time.

Dropscone, I know I posted this somewhere, but in general, long, cold, slow rises (ie in the fridge) yield a much more flavorful yeasted dough. The rises take much longer, but flavor is much better :)
