Yesterday the boy and i made apple coffee cake from Vegan Diner, soft pretzels, and choco chip cookies. The pretzels were pretty fun. I got to try out all my different fancy Trader Joe's salt.

In the past 24 hours: 2 east coast coffee cake with jam swirls, 2 deluxe cocoa brownies and 1 batch of jelly doughnut cupcakes all for an animal rescue open day tomorrow.

The best part was I got to eat a lot of batter the past 24 hours.

I bake constantly, but it's always boring stuff for other people so I always forget about this thread. Today, however, I am baking a strawberry rhubarb pie for personal consumption (it's in the oven right now), and I'm very excited about cutting into it later.

Glad to see this thread revived. I always get great suggestions here. I finally made the toasted coconut mango muffins from Vegan Brunch. Well, minus the mango. I thought these were really good. I had planned for the mango but when I opened the package I realized it was bad. So I just added some chopped pecans instead. So good. Looking forward to trying this again with fresh mango.

Before the muffins I made a brownie recipe in Chloe's Kitchen. The brownies were good. There were some issues during baking. The batter just seemed so runny but it smelled like it was starting to burn. Took them out and they hardened as they cooled. Very fudgy but a bit too sweet for me. Husband loved them. I would make these again too. Have some fresh fruit with them really cut the sweetness down.

Oh happy this thread is back. One of my favs. Last night I made rosemary sea salt pull apart rolls that were simply amazing. I love eating bread right out of the oven when its so hot you can barely touch it. These rolls were so soft and delicate right out of the oven. There were variations of different flavors at the site and I'm going to have to give these a try too.

I totally agree. I bake all day, but it's the same stuff over and over again. Though I made the rosemary chocolate chip cookies from IDI a couple days ago. My rosemary plant might be forever dedicated for solely growing enough rosemary to always be able to make those cookies. So, so good. Though this time they turned out pretty flat since I didn't listen to my internal baker who kept telling me to add more flour. I was too lazy. Still delicious and still devoured in 48 hours.

recently I have been taking cupcakes into work ... yesterday it was the Apricot Glazed Almond ones from Isa's Vegan Cupcakes Take Over The World ... 5 people in our team there ... all 12 were gone by the end of the day ...

I made the strawberries and cream bread pudding last weekend and will make it again this weekend. It took me forever to try it because I don't think I've ever tasted a bread pudding that was good. Maybe it's the raisins. I only tried it because other people on this forum kept saying it was good, and, well, it is. So... yeah, we're having that again this weekend for breakfast. Don't judge.

In other news, I tried to make an old-fashioned roux frosting with just shortening instead of half butter-half shortening and it tasted like shortening. Boo! So, I'll try it again because the texture is really nice, but I'll play with earth balance, I guess.

So, did I not tell y'all about the lemon-poppyseed pilsbury crescents that I made? Yeeeaaahhhhhh. pilsbury crescents, sprinkled with sugar, poppy seeds and lemon zest before rolling them up. Sooo good.

It's turned chilly here, but I'm not ready to turn the heat on yet, which has activated my baking urge. This past week or two I've produced lots of apple-and/or-pumpkin-related things: pies, crisps, muffins, as well as some oatmeal raisin cookies that disappeared too quickly. Today I made an experimental pumpkin-walnut cornbread that turned out really nicely; I'm also hoping to bake some regular old white bread to have with soup over the weekend.
