Ohh, I like this thread. I love baking.
Today I baked dark chocolate and cranberry cookies (own recipe) and sultana scones (for my Fatman).
And I made granola.

The peanut butter cinnamon rolls mentioned earlier in this thread (without the maple frosting). First try at vegan cinnamon rolls! Yummy, but could definitely be improved on.

I made a lemon-raspberry cake to take to a family dinner. I used the vegan cupcakes lemon variation of the vanilla cupcake, doubled into two 9 inch round tins, sieved some raspberry jam and added some fresh lemon juice to sandwich them together, and then piled on the lemon buttercream (from the lemon macadamia cupcake recipe). Served with some fresh raspberries. It was great, will definitely make again.

I've been thinking about cinnamon buns lately, but I couldn't make them in the Prevan days so don't have a lot of hope that they would turn out any better now.

The cinnamon buns from the vegan yum yum blog are easy and delicious! It would be really hard to mess them up unless your yeast was dead or something.

I made the VCIYCJ peanut butter cookies for the first time yesterday. They're really good! The only other vegan ones I'd ever made were the VWAV ones and they fell apart (tasty crumbs, though!). This recipe seems way more reliable.

Over the weekend I made Chloe's Pumpkin Cinnamon rolls. OMG they are amazing. They are huge too. I think next time I would half the recipe. The actual recipe was for the holidays and it had cranberry sauce in it but I decided to skip that. I have already been told that I am to make these again anytime I want. So I think they were well liked.

Next up is Molasses Chocolate Chip Cookies. Making them tonight, can't wait.

Saturday night I made the orange cranberry bread from V'CON, except I used dried cherries, and tons of different nuts - almonds, pistachios, walnuts and pecans it was delicious! I love the orange zest in that bread makes it really lovely and the texture was spot on. Definitely a repeat.

Not baking exactly, but I made the char siu bao from Vegan Eats World. They were so good! The bread is absolutely perfect. Just like at a dim sum restaurant and they were surprisingly easy. I already had seitan on hand though.

I bake all the time, but I never feel like I can post in here because it's all for other people. But today I'm making a pie for personal consumption, and I'm so excited! I haven't eaten pie in forever, and every time I make one I want to nom it. It's an apple blackberry pie, and I'm experimenting with using minute tapioca as a thickener instead of cornstarch, so hopefully it will be good!

Last week I went to NYC for Fran Costigan's Vegan Baking Bootcamp. It was amazing! Four days of nonstop baking, including a whole day of pies and a whole day of cakes. (I am too lazy to post food porn here but I have a lot on my FB if you want to friend me) My favorite thing that I personally made was a black-bottom banana cream pie, and my favorite thing that someone in the class made was a coconut cake with coconut-pecan filling and coconut frosting. I'm planning on making that one this weekend. I bake a lot at home (usually every weekend) and tried to use the class as an opportunity to try things I wouldn't otherwise make, like biscotti.

Thanks, ijdi! The pie turned out super yummy, but I didn't add quite enough sugar (that didn't stop me from eating two pieces, though!).

FYI, in case anyone cares: the minute tapioca worked really well! It dissolved completely and kept it together without being too gelled, was nice and clear (as opposed to cloudy), and didn't taste starchy like cornstarch can sometimes.

I made carrot cake cupcakes with cream cheese frosting. Used the carrot cake recipe from VwaV, which is my favorite ever. So good! I ended up making the cupcakes pretty huge, so it didn't make as many as I needed, so I made a batch of chocolate cupcakes and added orange zest and juice to the cream cheese frosting for chocolate orange cupcakes. They were good (obvs).
