Post subject:  Loads of Chard

I bought two beautiful bunches of rainbow chard yesterday, got it home, and then was gifted with another huge bunch by my housemate who doesn't like it but got it in her CSA. I usually do chard just sauteed with garlic or with ginger and soba noodles, but given the current abundance, I wouldn't mind branching out. What are the best ways to use chard?

We grew it, prolifically, a couple of years ago. I think we started giving it to people after a while because we got tired of it. One thing I remember liking was cutting it into long strips like noodles and putting it in soup.

If you have Plenty by Yotam Ottolenghi and like tamarind, there's a tamarind chickpea chard stew in there that's I like a lot.

i use chard instead of spinach in the strata recipe in veganomicon, and i make the chard and mushroom part a lot as a side, instead of going through with the whole recipe. i really like raw chard, too, with lime juice and chili and soy sauce.

The caldo verde from AFR uses chard too, I think. And it's delicious and hearty and filling.

I love chard pizza. I steam it first, chop up finely, and then quickly sautee it in olive oil with garlic and red pepper flakes. Put on a pizza crust, and top with your favorite cheezy topping. I particularly like dollops of extra garlicky cashew ricotta.

I really like it in a tofu scramble. I use the stems and sauté them with the onions for a little crunch and body, then add the shredded leaves at the very end, like you would spinach. It's also really good in quiche!

I'd say you could pretty much substitute it anywhere you'd ordinarily use spinach, but here are a few things I've made with it that have turned out well.

I like chard in spanakopita and quiche. It takes longer to cook than spinach, so you have to adjust your cook times a bit.

I made this before going vegan- http://www.epicurious.com/recipes/food/ ... chi-101647 I'm still not super adept at veganizing recipes, but I'm certain there is a replacement for the egg, and you can just omit the parmesan on top. The only thing is, you have to really, really, really squeeze all the extra liquid out of the chard. Otherwise it requires too much flour and they get super dense.

If it's just too much right now, you can blanch and freeze it for later. That's what I end up doing with a lot of the chard I grow. It starts to take over my world and I just can't handle it anymore.

I like to make pasta with mushrooms and chard in a nutcream-garlic sauce. I also use it instead of bok choy in Asian type stir fries. Add it toward the very end of the cooking time, so the stems still have a little crunch.

I make chard and potatoes differently.

I separate chard stalks from leaves. I boil stalks for 5 minutes. Then I stir fry both leaves and stalks in a little oil with some soya sauce.

I boil whole potatoes, halve them and shallow fry them in a bit of oil with soya sauce to brown them nicely. I put potatoes onto the chard and top with crushed walnuts.

Oooh sounds good that way. ITs a lot of steps so I'd have to not be feeling lazy about it.

Oooh I have really been into chard lately. Dont really like kale (yeah..I know, bad vegan) and my partner does not like spinach, and collards take a long time to cook. But we both like chard. i put it in any recipe in place of Kale

Also LOVE the chard and red lentil soup in Quick Fix Vegan

and the Miso Udon noodles in AFR

I really like chard in noodle bowls. Kind of as a sub for different types of Asian greens--it cooks down similarly to many of them. No cooked chard is chard to me without red chili flakes or some type of spicy stuff.
