I am making VV steamed white seitan now.

how should I use it?

i've used it in arroz con seitan and made it greek style to use in gyros! awesome both ways!

Devour the entire batch as soon as it's done cooking, then lie on the floor moaning about how over full you are. When you finally feel better, complain about how you don't have any seitan to eat. No, I've never done this, but I feel like I'm in danger of it.

I think my fave way is grilled on a sandwich with lettuce and vegan mayo.

The sandwich, I can't remember its name. It was called Cuba Libre in testing and may still be. It's amazing.

My next mofo post is all the recent ways I've used that seitan. I love it. I've pulled it apart into chunks for bbq sandwiches, seitan stroganoff, the guatita recipe in Viva Vegan, and marinated/baked it into shwarma slices for gyros.

All the different variations on chopped seitan, I can't remember what the recipe is called but so far I have had 3 different variations and they have all be superb.
