 Post subject: Different kinds of cornmeal

I'm making gumbo for dinner, and I decided that cornbread would be a good thing to go with it. But I realized that I don't have any regular cornmeal. I've got the MASECA kind for tamales, and the PAN kind for arepas. Would either of those work for cornbread? I'm guessing the PAN stuff would be less likely to work, since it's precooked, but I'm not sure about the tamale kind.

i have used the maseca type meal for cornbread before (i didn't realize that for arepas and tamales the masa harina was different?). i like "new england" style cornbread though, more cakey, i guess, really light? and it worked just fine.

Thanks. I decided that I want cornbread, but I really don't want to go out to the store, so I'm trying to make it from what I have on hand. The only kind of milk I have is coconut, so I'm not sure how well this will turn out.

I tried it. It ended up a bit denser that usual, but still pretty good.
