I'm so tired of them. Tired of everything. I have several containers in my fridge with stuff I really don't feel like eating. Can't really put them in the freezer either, then I'll just forget about them. Don't have much room in there anyways.

And I don't want to throw things out either, doesn't feel right.

I wish I had a good answer for this but I often find myself in the same predicament. What kind of leftovers are currently residing in your fridge? Can they be reinvented? I've seen people on here turn leftover soup/stew/curries into veggie burgers by adding flour and bread crumbs.

Yep, or veggie loaf. I've turned many a leftover stew into a veggie loaf.

sometimes i'm just too burned out on something to eat anymore of it. turning it into a veggie burger wouldn't help, so i totally get that feeling. i try to make smaller portions of things or freeze it right away (if possible) so that it doesn't go bad by the time i'm sick of eating it.
so, i dunno, sometimes i just have to throw something out even though it sucks to do that! i'm getting better at not making huge recipes so that doesn't happen as often.

They go in to the freezer for 6 months until I realize I'm never going to actually eat them. Leftover rice are easy, though. You can use the rice for Chinese food on Monday and turn it into cilantro-lime rice for Taco Tuesday!

I've gotten tired of recipe-following so I've been cooking nearly every day with only enough for dinner that night and lunch the next day. It's working pretty well. (But it's all bowl-style and not all that exciting/interesting, which is fine by me.)

I like the curry veggie burger idea though too.

I have beans and rice and stuff that looks like hummus but smells like peanut butter (I think I made that last week when I was sick). Even if I turned the beans and rice into burgers or whatever it would still just taste like beans and rice, I guess?

I really enjoy cooking but eating all the mediocre stuff afterwards isn't as much fun.

I hate leftovers and it makes me feel so guilty. I aim to only made 4-serving recipes, and my boyfriend generally eats two for dinner and one for leftovers. That's what I aim for anyway. If something is really good we'll eat up the four servings immediately and lament that there isn't anymore, so we're always losing the battle. I do make huge batches of soup and freeze leftovers. We actually have a couple of freezers at work that I occasionally stash stuff in because we work together.

Composting makes me feel a little less guilty, although I do try to avoid putting a lot of cooked foods on there because I feel like it might attract pests. Beans and rice are pretty versatile -- how about looking to the bowls thread for some inspiration for some sauce and veggies to add?

As far as the unidentifiable hummus like stuff, I would toss it if you can't remember what it is or exactly when you made it. I try not to keep leftovers for more than about 5 days. I feel a little less guilty tossing stuff when I think it might make me sick.

I never eat left overs as is. I would:

Tortilla shells, take rice, beans, some sauteed veg and maybe some tofu ricotta and/or daiya shreds, in the oven to bake for a bit, with a nice sauce + salad. I would take that hummus sauce and add a touch of ginger and thick tomato sauce...but not everybody likes the ginger/tomato/peanut butter combo.

I sometimes toss leftovers if the food didn't turn out nice and I can't bring myself to eat it. My solution is basically to cook as much delicious food as possible. If I don't know if a recipe will be good, I halve it so there won't be leftovers.

Our freezer is pretty full too, but I do often freeze leftovers so I can have more variety in my meals. I try not to eat the same thing for more than two or three days in a row. If you're worried about forgetting what is in your freezer, label the containers and make a list of what's in there.

I'd say, toss what you don't want to eat anymore now and make a fresh start without leftovers, or with leftovers that you actually like.

I don't like leftovers either, so I've taken to cooking small enough meals so as not to have any. The only exception is when I will be working a late shift and will be eating dinner on my "lunch" break. Then I purposefully make something I know I'll be happy to eat heated up in the microwave at work. (I don't have a microwave at home, but will soon have one, so perhaps my feelings about leftovers will change when I do.)

We're pretty big eaters, so rarely have more than one or two servings of leftovers, but we freeze stuff. Make yourself not forget about it! If you wait a couple weeks to eat it, then it's not like "ugh, this again."

I hate wasting food so I generally just eat them. I tend to do batch cooking once a week and eat things throughout the week, so it's always leftover time at Casa Panda.

The bean/rice thing sounds like a good candidate for repurposing. Make burgers! You don't have much to lose if you're planning to toss the leftovers otherwise anyway.

Ah man - I love leftovers. I have a big container in the fridge that I continually add bits and pieces of different leftovers to and it evolves and I just put siracha on the whole thing and call it brunch or whatever. Not helpful I guess unless you mix stuff?

I guess I'll give the burger thing a go and then freeze the burgers. There was pretty much liquid in the beans and rice though. But if it doesn't turn out then at least I've tried, so I won't have to feel too shitty if I end up throwing it out...

I'm going to echo the sentiments of make-less, halve recipes, and remind myself that every time I eat leftovers its at least a few bucks I am not spending on lunch! I usually cook for two, which totally helps, but my girlfiend's appetite can be picky. I lived alone for years and unless it was soup I was intentionally making for the week, I would nearly always halve recipes. I'm good about repurposing things when I keep then separate - seitan, beans, grains, etc.

I feel like making leftovers REALLY hot (temperature wise) and then adding a ton of hot sauce makes them more palatable.

I usually like leftovers, but I have been going through a mood lately where I don't want them. I give them to my husband in his work lunch or I heat them up for him at lunch time if he is home, and look like a good wife. I have been craving just plain stuff lately. I am sick of fancy dinners too, so every night this week we are doing super easy stuff and nothing has produced leftovers.
