i have a great carrot cake recipe' that i was going to give to my husbands Aunt Beth. i told her what was in it and she said "that sounds good, but i'll use 'real food' in it." (?!!?!!???!!?!?!) i said " if you change the recipe' it wont taste the same.. you should probably make it the way i have it so it comes out right." she put her hand up and said "oh no, i don't want vegan. i want people to like it." what the heck?! i didn't end up giving it to her. if she wanted to add juice from a tortured animal, she could go find her own freaking recipe'.

This is best illustrated by the phenomenon that freshly baked vegan carrot cake cupcakes with Tofutti cream cheese frosting are too gross to even taste, however, boxed cake mix carrot cake topped with accidentally vegan, chemical filled, cream cheese frosting is super delicious.

So stupid. Even if you take the ethics out of it, why would you want to change a recipe that has a PERFECT result?
Give me the recipe instead. I won't change a damn thing.

Aw, that's funny and sad at the same time. I once gave someone a vegan cupcake recipe and they decided to "improve" it by adding egg. D'oh!

HERE IT IS!!! hope you guys like it!! its revised to my liking from another recipe' ‘What’s Up Doc??’ Carrot Cake
Ingredients: 2 1/3 Cups all-purpose flour 1 tsp. baking powder 1½ tsp. baking soda 1 tsp. cinnamon ½ tsp. nutmeg ½ tsp. salt 6 TBS. flax seed meal 3/4 Cup warm water 1½ Cups sugar 1 Cup Grape seed oil 1 tsp. vanilla 2 Cups shredded carrots 2 Cups pecans/walnuts, chopped ½-1 Cup crushed cookies(or Isa's recipe for garahm crackers. i made this change recently:)
Icing/filling 2-3 CANS Coconut milk (depends on how much filling/icing you want. set in fridge overnight) Raw sugar (or whatever you prefer) Spices as desired (I used a little Nutmeg, Cinnamon and a pinch of ground cloves) Instructions: 1. Oven at 350º. (I do this after step 7. preheating never works out for me:/) 2. Grease two cake pans (or line with parchment paper) 3. In a small bowl, sift together dry ingredients (flour through salt) 4. In a large bowl, whisk together flax seed meal and water. Beat in sugar and oil 5. Add vanilla and carrots, combine 6. combine the dry ingredients with the wet. 7. Fold in half of the nuts 8. Pour equal parts into pans 9. Bake for 20-25 minutes or until a toothpick comes out clean 10. Let cool in pans for 10 minutes 11. Use a knife to loosen edges of cake from pans 12. Flip out of pans. Let cool fully on wire racks 13. for the whipped coconut filling, scoop out stiffened coconut from the can, leaving about a quarter of the water at the bottom. With a hand mixer, blend the cream and sugar (as much sugar as desired). Add some pumpkin pie spice or cinnamon or whatever spices you want! Decorate with cookies and remaining nuts.

haha thanks! im serious you guys... im the ONLY vegan i know and everyone whose had this cake LOVES it. just remember, if you dont let it FULLY cool, the whipped coconut filling WILL melt. made this mistake once and it was a glorious mess!

I dreamed about this thread and there were sprouts on top of the cake and no icing....so I was like "of course they don't want vegan. You're making us look all like freaks!"

My omni sweetheart even specifies things like "cow milk" in addition to the way most omnis specify "almond milk" or "soy milk" when talking to people these days. Did she think you made it with paper mâché and brick dust? That would not be real food.

Does anyone know a nice carrot cake icing recipe other than the one above (making carrot cake for my boyfriend, who is not fond of coconut) and also not containing cream cheese? I tried this icing, which I thought sounded good, but didn't like it.

Recently I posted the Food for Lovers vegan superbowl thing on Facebook. I thought of this thread when a family friend commented that she found the concept of vegan junk food "depressing" - and then backtracked by saying my homemade junk food (cupcakes, cookies, whatever) is real food, implying that store bought stuff isn't, I guess? People sure have weird food rules.

I have a friend that insists that vegan food is 'FAKE' food. He actually uses that word.
Ok. My banana is fake. You got me. It's make from islolated soy protein.
(this guy is a real joker though, so he might be messing with me)

Then add in a teeny pinch of salt and a dash of lemon (for that acidic taste) and it works well enough.
