 Post subject: using xanthan gum

Anyone use it for stuff? Does the texture change if it is cooked? I just used it to thicken a no-cook sauce and it worked just fine but I feel like I have a mouth full of (what I imagine) is frog spawn. I also spilled it on my hands and it took me forever to get the lubed-up feeling off. The sauce was, for lack of a better word, slimey.
I want to use it for salad dressing, etc but don't want to turn everyone off.
Any good tips for successful use?

Use the least amount that you can and let what ever it is sit for a bit (as well as mixing a number of times) before deciding whether or not you need to add more. Sorry that is all that I have as I have not mastered it either but my biggest mistake when I do screw it up is not making sure that it is incorporated enough before deciding there isn't enough and then I add more when I don't need to.

The tiniest, most miniscule amount goes a loooooong ways.
