folks,
i'm wondering if you've come across pho broth recipes that make you go wow???

i've made the pho recipe in Vegan Eats World and it's good, sure enough. In fact, I've been asked to make a pho dinner-- first time i've been invited to cook for a group- because my friend likes that pho so much.

That said-- the flavor of that pho is different from what i've had at a restaurant, also I am not sure i can abide by a reddish pho broth (from the tomato paste).

So, has anyone played with other pho recipes or tweaked THR's (bless her soul!) recipe?

To add on, does anyone know if there are vegan pho broth powders or cubes or paste available at asian markets? I've seen several available but I can't tell if they're vegan or not.

I really loved Terry's recipe because that seitan is the best! I've been admiring jdfunks pho recipe for a while and that'll be the next one I make.

I'm lazy and just use Pacific brand vegetarian pho base, which is good but nothing to write home about. One of these days I'll make it pho real (womp womp).

i used to buy it at the cambodian market (cubes) in RI, but now i make my own, it is SO easy. someone here posted it, i will see if i can hunt it up.

Hmm well i love the pho broth in Vegan Eats World. It reminds me of Pho when i go to Loving Hut, or beef pho broth from pre-vegan. My omni partner tells me it is spot on for beef pho

What is different you think? Maybe a simple omission of a few ingredients will work. a quick look at beef pho recipes shows the star anise, ginger, cinnamon etc. maybe you can just leave the tomato paste out of you don't like it?

i wish i knew whose this was. i copied it down by hand. it was a forum member who wrote down the way her mom or sister made broth (if i recall correctly). if you know, please tell me so I can thank her again, this recipe makes me a very happy camper in a land with no pho restaurants. I love jdfunks' version too but i need a quickie version sometimes and this works (pressure cooker makes it about 15 min instead of 45 min simmer).

toast in a pan:
2 sticks cinnamon
10 cloves
8 peppercorns
5 star anise stars
add the following and saute 5 min:
2T oil
1 quartered onion
10 sprigs cilantro
2 cl garlic
3/4in ginger sliced

add and simmer 45 min:
1 bay leaf
1T sugar
1T soy sauce
1t salt
8 c veg broth

strain and add your components. eat the soggy onion and garlic because they're delish.

This forum has re-awakened a massive pho craving in me! I am so making some for dinner, probably with the veglicious recipe! The only thing that saddens me is that I didn't pick up the awesome looking basil I saw on my shopping trip last week. I've already got frozen pesto from a couple weeks ago, but it would've made such good garnish on the pho!

I am bumping this thread because it's forking cold, and I want pho all the time. I love Mel C's (Veglicious) recipe and Kittee's. My question is whether anyone has ever made the broth in a slow cooker? I'd love to make a big batch of broth, freeze some of it, and then I'll have quick pho on weeknights.

I can't see why you couldn't use the slow cooker- you just need to toast the spices first.

We made Mel C's pho and it was easy and fantastic. A+++ would make again.
