My brother & sister-in-law had me over for breakfast for dinner tonight. They made a simple, yet super tasty dish that they saw on the Jazzy Vegetarian, a PBS vegan cooking show. It was called Rocky Mountain Toast and is basically toast with the center circle cut out & cheesy tofu scramble cooked into the center of the toast. I know, right? So awesome for PBS! I believe pretty much all of her recipes are vegan, even though the name of the show is Jazzy Vegetarian.

FYI, Christina Pirello has 2 vegan cooking shows on PBS. Christina Cooks has been on forever, and she has a new one, Christina, that just started in Jan(I believe).

I remember watching V is for Vendetta pregan and seeing something called eggies in a basket or what not and I was obsessed with it? It was basically eggs cooked in the middle of toast. I tried it before, it was good. A tofu scramble made the same way sounds good too.
