i am munching on a homemade soft pretzel. with crappy yellow mustard, the best kind. and way too much salt. mwahahaha.

I've been baking my own bread lately as a way to save money. It's bad - every time a loaf comes out of the bread machine, I want to eat the whole thing. I love the smell of fresh bread, and the loaf always comes out so fluffy and soft. I just want to slather it with margarine (or chocolate spread, or Speculoos) as soon as it comes out of the machine and eat until I feel sick.
I need to make some more Green Monster rolls. They're so good, and it's fun to take them to work and have people question if my bread has gone off.
There's a pumpkin bread in 500 Vegan Recipes that I freaking love. I can't make it now because I wouldn't be able to stop myself from eating it. I've also made something like brioche that was insane, and it wasn't even proper brioche, so I would love to eat real brioche (well, a veganised version).
I need to experiment more. I really want to make sourdough but haven't gotten around to making starter. I'd also love to use some different flours.

I made bagels for the first time today. Why have I never made bagels before? They were so good. So much better than what I can get in stores around here. I haven't been to NY in far too long to be able to remember what a true NY bagel tastes like, so I can't make any claims about authenticity. But they were darn good!

I'm picking up some barley malt syrup today so I can make Peter Reinhart's bagels. I love sun-dried tomato bagels, so I'm going to give those a go. My favorite thing in high school was to eat a sun-dried tomato bagel with broiled cheddar on top. Gonna make that happen.

Yay for the bread thread!!!
Can anyone recommend a good recipe for a sweet-ish and moist whole wheat bread (bonus points if it works in a bread machine!)? Every recipe that says it's sweet is never sweet enough (I'm talking American level of sweet bread), most recipes don't use 100% whole wheat flour, *and* my breads always come out too dry and dense. I basically want to replicate good supermarket bread, like Dave's Killer Bread or Milton's. I know that perfect recipe is out there somewhere!!

do a search for Mom's 100% Whole Wheat Air Bread. it's not sweet, but you could easily up the sugar. it is the best 100% ww bread i've ever made.

I have really good luck with the whole wheat walnut bread on KAF site. I add 1/4 cup gluten and usually sub sunflower seeds for walnuts. It's perfect sammich bread and you could easily up the sugar. I wanna try torques recipe, too!

Oh god, you guys. Reading this thread...drool. I'm going to use the bread maker tonight. I want to try that green monster bread, but I don't need another cookbook.
ETA: I found the recipe online! Do you think it would work well in a breadmaker?

Awesome, thanks torque and IJDI!! I wasn't sure if upping the sugar in a normal recipe would do something bad wrt the yeast, like make them grow faster. Can't wait to try these new recipes!

Foccacia is my favorite, either the recipe from the Panera bread cookbook or from vcon. I love it with rosemary. Now my soap smells like rosemary so every time i shower i want to make bread.
Has anyone made French bread? I'd like to make legit baguettes.
