I've become a huge fan of hot sauce in the last couple years. I'm curious what you guys use and what your favourite is!
In my house, we currently have:
Sriracha Louisiana-Style generic house brand Frank's Original Tapatio El Yucateco green habenero hot sauce

I've always considered myself more of a salsa girl but in the last few years, I've increased my usage of hot sauces
Frank's Tapatio Texas Pete (actually one of my favorite) Tabasco (This is one of my original loves, hash browns are a tabasco carrier) Sriracha Chunky asian style garlic/chili sauce (current obsession) Valentina Cholula Marie Sharp's (so good, so good) El Yucateco

I just have Sriracha and Frank's. I really want some Cholula though because it's my favorite on tofu scramble!

Cholula (for simple heat), chipotle Tabasco (for smokiness), and Encona Creole pepper sauce (scotch bonnet sauce, so its very hot but with a fruity/sweet flavour).

Yes, each have their own unique applications! For example, I wouldn't put Sriracha on my scramble, but Frank's or Tapatio are a natural choice. But Sriracha is the only one that can be drizzled on Asian noodle soups.

Sriracha Sambal Oelek pickled thai chilis (megahot -- got it from Chinatown -- label is in Chinese, so I'm sure what the ingredients are) smoked chili sauce (another Chinatown buy -- who knows what it is?) Chouloula dried cayenne and habanero fresh thai chilis

Sriracha Frank's Tapatio and some Jamaican hellfire stuff that I never use because it's hard to get it out of the bottle.
I need more!

Let's see if I can remember 'em...Tapatio, Cholula w/ lime, Crystal, Frank's Red Hot, Arizona Gunslinger (Green Jalapeno, Red Jalapeno, Habanero), Oh Brother Habanero, Texas Dew Drops, Dave's Ghost Pepper Sauce, CaJohn's Mongoose Sauce, Bull Snort (several varieties), some obscure Chipotle sauce I can't remember the name of Sriracha, Sambal Oelek, Sambal Pemuda and Harissa. I know there's more I just can't think of them. Last I counted I was at ~25 bottles.
Of them all my favorites are the Oh Brother Habanero & Dave's Ghost Pepper. They actually pack a punch which I can't say for most of the others (cept the Mongoose, which is more of an additive than a sauce).

Oh, I forgot. I also have Thai sweet chili sauce. Does that count? I think of it as more sweet than hot, but it does have a bit of a kick.

Oh and if we are including chiles as well as hot sauce, I'd include the following: Salsa made with serranos and habanero Hatch chiles (I order these from NM) Small red asian hot peppers (not sure if they are thai or what not, I buy them at the Korean market)

Sriracha Huichol (fave for Mexican food) Crystal Green Tabasco (nice for when I don't want things actually spicy) and a pretty old bottle of Burn Baby Burn
It's not hot sauce, but I love nanami togarashi. It's a Japanese chili powder mix that is excellent on things like udon noodles.

Right now I only have three: Sriracha, Frank's, and a big old tub of gochujang. At the most I think I had like six in my fridge, but I am trying to be less of a sauce hoarder.

Can't believe I didn't like hot sauce before, it was Frank's chili/lime that got me hooked.

I forgot I also have some rooster chili lime stuff and some harissa. The little grocery store by my house has a huge selection of random hot sauces that I always drool over...might have to make a purchase soon!

I love the Trader Joe's Chili Pepper Sauce. It tastes great and it has no sodium, which is a huge plus for me. Hot sauces are usually sodium bombs.
