We have about 2 door shelves that fit all our various sauces and what not. American fridges are fairly big, not sure how big german fridges are but I think we have a pretty standard size and its about 6 ft by 3 ft by 3 ft (approximately).

Chicki, I have hot sauce at work, too! When I was in Mexico, all the souvenir shops had these sets of tiny, miniature hot sauces...so I have a mini bottle of El Yucateco at my desk!

My fridge is tiny, but it can handle my hot sauce collection. Living alone helps. I only buy what I plan on eating over the next few days. You don't have to refrigerate hot sauces esp since so many of them are vinegar based. I do, though because I think it keeps them more potent. I've kept really potent stuff on the counter before and found that in a few months time it lost much of it's kick.

I let myself run out, which is absurd. Now I'm excited to restock though, and I'm seeing so many new kinds here!

Frank's Sriracha Cholula Tapatio Valentina Tabasco El Yucateco green habanero Harissa Some West Indian sauce which I don't remember the name of Byron Bay Chilli jalapeno sauce Byron Bay Chilli mango chipotle sauce I also have sweet chilli sauce and sambal oelek, but I don't count those as hot sauces. Also I had a Trader Joe's one that I guess found its way back from the US with me, but I threw it out last week because it expired and wasn't that great anyway.

I am completly out of hot sauce, I may need to get some more in. So many choices, guess I'll have to try them all. Ah, the hardship!

i had a really nice ghost pepper sauce that i gave away, i wish i could remember which one it was. it was right hot, and i gave it to a friend who appreciated it even more than i did.
am i the only person who gets the hiccups from a good spankin' hot hot sauce? it's sort of my benchmark test.

I'm not sure I'm into the really megahot sauces, because I like to be able to use them liberally enough to add flavour and not just heat. Or maybe I'm just a wuss.
I don't get the hiccups, torque, but my benchmark is when my nose starts running. Ooooh burns so good.

allie1123 wrote: -Melinda's XXX Hot I'm surprised no one else has mentioned Melinda's. It is my favorite..or at least top 5. I prefer the XXXX, but it's harder to find. I'm a hot sauce fanatic! A little about my hot sauce tastes: I hate sriracha, and am not a huge fan of frank's. I consider taco bell fire sauce to be insanely mild. I don't like any sugar or sweetener in my hot sauces. And peppers have to be the first ingredient. When I go to Moe's, I love to pile on the fiery tomatillo salsa, but think their hard sauce is too smoky. My faves: this one is a cheap hot sauce found in the jamaican section of the grocery store. i love the heat and color (Although it's got preservatives to keep that color)..and that it's basically just straight scotch bonnets. nice mild (in my opinion, which means it's probably pretty hot to most people) heat with a great flavor and of course melinda's I've got a few insane level ghost pepper sauces that I don't use too often because they just seem to add heat with no flavor. If you go to NYC, check out the hot sauce selection in Kalustyan's! I could spend a paycheck on hot sauce. 12 kinds of melinda's!

I find Melinda's to be 'just ok'. I haven't really been a fan of any of the sauces I've tried.

Word. I hate when you come actoss, say, a habanero sauce. Gee, that must be spicy! First 3 ingredients: vinegar, dates, salt. GTFO! If I want to dumb down my hot sauce I'll add my own vinegar, thank you. Any you expect me to pay $5-10 bucks fro this sauce...HA! I was just thinking this yesterday: does anybody else wish Sriracha made a low-sodium or salt-free sauce? Just a teaspoon is 100mg sodium and if you're anything like me, you probably add the stuff a table spoon or more at a time.

I love hot sauce and have a bunch that I can't remember off the top of my head right now, but that's not why I'm posting. I just have to confess something. Every single time I see the title of this thread my brain reads "What's in your hot saucy arse?" instead. There, I feel better now. Carry on.

I have sriracha cholula tabasco chipotle tabasco some stuff I got in Texas called No shiitake It's Hot (or something like that) - it's actually not that hot! I also found some in an american shop here called Woman Scorned, I haven't opened that yet.
Also I have some chinese chilli bean sauce, if that counts. It's SO freaking hot, I put about 1/2 tsp in my noodles the other day thinking that i'd start with a small amount and it was superrrr spicy.

I won a case of hot sauce last year from Mic's Chilli, a local company. The case had everything from mild to damn hot, and it'll probably take another year to get through. The current bottle in my fridge is the regular Inferno kind - 8 habaneros a bottle. Tastiest hot sauce ever and comes in bottles with rocking artwork :)
Apart from that I have these in use atm: homemade chilli jam Tabasco (original) Tabasco (chipotle) Franks Red Hot Harissa Reggae Reggae sauce

I don't understand how people love cholula and tabasco! They are so nasty. Not because of heat, definitely because of the taste.
I guess I prefer the Asian hot sauces without (a big without) cumin.
Sriracha and chili-garlic sauce have my heart, but we also have this local product called Awesomesauce and it is, well, awesome. If I need something more vinegary/milder or for tacos, Frank's or Louisiana are passable.
