Maybe this can be a 'sticky' topic. Because I am sure we all face the question from time to time!

My problems:

Corn casserole: the recipe makes it seem like a spoon bread, or a gooey bread. What do I serve it with?

Smokey peach tofu: The recipe says to serve it over coconut polenta - no way in hell my boyfriend will dig this. Would basmati be good?

The cookbooks Plenty and Meatless both abound in veggie side dishes. Personally I only get to do potato and an occasional kale or broccoli side dish due to a picky boyfriend. When it comes to veggies I kinda let what is on sale or abutment at the market inspire me. Right now I want to pickle red onions for tacos and sandwiches!

For the corn casserole, I'd serve some smokey stewed collard greens on the side.Then you've got that corn& collards southern combo going on. Not sure about the peach tofu, though. That seems weird enough it's own IMO!

I think basmati would be great with peach tofu. Maybe cooking the basmati with some coconut milk would be yum?

I am doing basmati and pakoras on the side tomorrow. I would use coconut milk but I do not know what to do with the rest of a can. My boyfriend okay-ed 'some' coconut stuff yesterday!

For the casserole you could do some barbecue tofu, and maybe a salad with crisp greens, avocado, and a chili lime dressing.

Smokey peach tofu sounds pretty unusual to me, so maybe just basmati rice and a simple steamed green is the ticket.

I have been getting pounds and pounds of spaghetti squash in my CSA box, and though I like the simple way I prepare it (baked, then scrape out the innards and toss with lemon/chili flakes/EB/salt/pepper), I never really know what to eat it with. The spaghetti squash Mexicana from V'con is really the only way I've ever liked it other than just alone as above.

Normally I'd serve a sweetish tofu over quinoa but I think I remembered you saying you're allergic? So maybe either plain couscous, millet, or rice or a pilaf of one of those grains (something like: http://www.nourishingmeals.com/2009/10/ ... pilaf.html). And then I'd do a spring veggie on the side -- asparagus if you can find it cheap enough or some lightly wilted spinach or a green salad.

There's not many proteins that would go with alfredo pasta. I usually just have some homemade garlic bread and a green salad...Carb overload, I know.

Hows about a bean salad of some sort? Chick pea? White bean?

Yes, I am allergic to quinoa and I also have a picky boyfriend who will not really eat a side of greens. I might do coconut rice tonight and serve it with pakoras - an East meets East thing...


Spaghetti squash: I saw yesterday to mix it in with regular pasta to create salads and pasta dishes.

Alfredo: I would do a appetizer for a side because the only thing I think that goes with a creamy pasta is bread...Maybe a white bean crostini would get you the protein you need?

Bean salad does sound good to me. I really like the red kidney bean and mixed greens salad from The Mediterranean Vegan Kitchen. I often pair it with a pasta dish that is low in protein.

Would it work to do a smokey, bacony flavor - like maybe smoked tofu or tempeh bacon? After all, the omni version, Alfredo Carbonara is such a favorite!

I almost never have protein with my pasta dishes. I figure I eat enough of it in the rest of my diet. But if that's all you're eating (ha! I know! It is so good!), then maybe you could do some Italian marinated tofu (I like the one from VCON) on the side? With your broccoli? Like, don't make the pasta the main part of the dish, just treat it as you would a grain.

I made refried black turtle beans but with Ethiopian berbere. As much as I'd love some injera and gomen wot with them, I have no time for injera and don't have any greens until Tuesday's CSA. They are pretty starchy (but super spicy and delicious). Ideas for accompaniments?
