In putting 'dill' into the search function, I see that many ppk'ers don't like dill.

For the rest of you, what do you like most to do with it?
I seem to have a surplus from a recipe that required very little.
The only things I ever make that have much dill are Dill Tempeh Pate from The Native Foods Coobook (so amazing)
and the Hungarian Mushroom Soup from Moosewood (also fantastic).

I want something new. suggestions?

Creamy salad dill dressing! I don't have a recipe on hand but it's basically:

Vegan mayo
Unsweetened soy milk
Lots o' dill
Onion powder
Salt
A little lemon juice

Mix it. Put it on your salad. done!

ah, the kugel is a great idea!

actually, they're all great ideas. thanks, you guys.

I made a vat of tsatziki after making a ton of falafel so a creamy sauce is out (tho totally something I'm into otherwise), and on potatoes is a lovely idea I totally forgot about (i always seem to go straight to rosemary and thyme).

now all i need is cauliflower and/or potatoes. hmmm...

i heart you, ppk!

Dill also freezes really well. It's probably not great raw after that, but works well in soups or in roasted stuff.

Lots and Lots of roasted potatoes.

Nava Atlas has a good Vegetable Bread Pudding recipe that uses dill. It's in the Vegetarian Family Cookbook.

That basmati-chickpea thing from Vcon (the actual name of it escapes me at the moment), but dill does freeze well so you don't have to let it go to waste even if you don't want to use it right away.

It's not a lot of dill, but I love this cauliflower poppers recipe and make it almost weekly, so I guess it ends up being lots of dill: http://vegweb.com/index.php?topic=18457.0

I add a little crushed red pepper and paprika for some kick.

Yeah, I just made this recently. Basmati-chard-chickpea pilaf type dish that calls for a FULL BUNCH of dill. And I wouldn't hold back, either. I think it's the dill that makes it so delish!

Also, like others have said: spanokopita, tofu dill salad from VwaV

The black eyed pea soup from Joanna's book YRR calls for a 1/4 cup of fresh dill and I make that a healthy 1/4 cup when I make it, and I make it often. It takes five minutes to cook in my pressure cooker! Also, it's delicious and one of my favorite soups!

Glad to know that dill freezes well.
