question: eggplant bacon - to eggplanty? i really want to make it but the guy hates eggplant...

I made it and liked it. If you slice the eggplant thin enough, it's not eggplant-y at all. My problem was that I couldn't get it to be crispy.

Too much oil can do that. Also when you dehydrate it (assuming you are using a dehydrator, I do) let it sit on the racks to cool for a while after the dehydrator is turned off. I am not sure why but perhaps the heat keeps it "malleable", whatever the case I notice that once mine is cool it gets nice and crispy compared to when it is warm.

Glad I wasn't the only one that sideswiped this. But still even with the original recipe would a dehydrator be off limits or would it meet terms of the challenge even though it is a process change?

of course it meets the terms of the challenge, there are no vegan cookbook challenge police ;)

you can totally use a dehydrator instead of an oven, and you don't have to follow a recipe 100% either. for example if a recipe calls for some herb that you despise, feel free to sub something different :)
