Zula, that sandwich is on my to-do list. What vegan ham did you use? I don't think I've come across any vegan ham at the stores, but I'm really tempted to just use the Tofurkey smoked slices cause I know I love them.

I used the Yves veggie ham. I didn't know if I'd be able to find any either, but I guess I've just never looked for "ham". It never really appealed. :) I love Tofurky slices too, they'd probably work just as well!

I'm super late posting this, but I made the Artichoke Paella from Vegan Eats World. It's really delicious. The rice soaks up all the sauce and spices. It's made with Tempeh Chorizo, another recipe in the book, which I made the day before. So the paella came together quickly, which surprised me. For some reason, I had always thought it was a very complicated dish. I subbed Spanish green olives for the pearl onions because I had some in the fridge and I always want to add olives to everything.

It was awesome. It makes a lot, like 6 big servings, so I might have to find a way to halve the recipe when I make it again. But I really didn't mind eating the leftovers for lunch for the next three days.

That paella was one of the first things to grab my attention when I bought the book, and my spouse has expressed great enthusiasm for it, but we haven't made it yet. Perhaps for VEW week! It looks as good as I imagine it will taste!

Made the cheezy mac and served it with some leftover hearty chilli. Quite good. Pity I have a dose of nausea so I couldn't enjoy it fully.
