Today I made the Chocolate Pumpkin Loaf from the PPK blog. It was so yummy and chocolaty the whole family loved it. It did take a long time to cook (about 1 hour and 15 min) but it was GOOD! As you can see from the picture my 10 year old daughter licked the spatula and bowl clean and claimed the batter tasted like chocolate pumpkin pie.

This is my VWAV Chickpea-Hijiki Salad Sammich. It's a win, and I think that is partly because it is a sammich. Because, as we all know, sammiches are way tastier than sandwiches. The texture of the schmushed chickpeas and the fishy taste of the hijiki made it eerily like the real thing!

Edited because I can't spell or arrange words correctly the first three times.

Tempeh bacon is like the best thing ever, although my tempeh hating brother even hates that. I think a tempeh bacon blt is the ultimate tempeh tolerance test. I think VWAV has a very similar tempeh bacon recipe to AFR?

Marzipan, that slash in the last square bracket points in the wrong direction. I think that's what the problem was.

I was going to make the kati rolls with golden tandoori tofu today, but I don't have all the ingredients for the rolls, so I'll just make the tofu. But I'm still really into the idea of putting it in a wrap, so I'm thinking tandoori tofu + cashew yoghurt sauce + roasted potatoes. Should I go for it?

Update on the Chocolate Pumpkin Loaf:

OK the whole loaf is gone, just ate the last piece! It was made last night at 5pm and it's officially gone at 10am this morning. I think it tasted even better today than yesterday when it was still warm. It seriously tastes like delicious chocolate cake, you would never believe that there I only 2tbsp of oil in the whole loaf, I'm sure the one cup of sugar helps with that!

I made this a few months ago, but as muffins and they were SO amazing. Glad you and your family liked it! Tonight I'm making the black bean, corn, chipotle stew from VWAV. I'm not really excited about it, because it just sounds like chili, but hopefully I'll be pleasantly surprised. The manfriend is really looking forward to it, though. Black beans, corn, and spicy things are on the list of the very few things he will eat.

Last night I made the Chickpea & Rice Soup With A Little Kale from the blog.

The only thing I changed was using black rice instead of white because oddly I didn't have any but it was fantastic. The black rice gave a really chewy texture and it was an incredibly creamy hearty soup. Perfect meal for a cold winter day.

I made a bunch of food from Vegan Eat World.

Pastichio Vegani: sooo good. Some omni friends i served it to liked it so much they asked for the recipe! The noochy sauce that goes on the noodles was delicious. i kept sneaking bites of it. I'm not a huge fan of nooch but i am sure i will be making just the sauce with noodles for a quick dinner.

Braised greens with garlic and lemon: I was not a huge fan, but i don't really like cooked greens. No one else complained.

Garlic lemon potatoes: even better the next day.

Mediterranean chopped salad with cashew faux feta: The cashew feta was wonderful. I wouldn't say it tasted like feta, but it was delicious. My cousin actually asked if it was cheese.

I also made the chocolate yogurt bundt cake from PPK. i served it with fresh strawberries and TJ soy ice cream.

for how to insert photos into your ppk comment, please go to the original cookbook challenge announcement and find the instructions for flickr, the reason you are having problems is because you are sharing a weblink rather than a photo jpg link. you need to have a *.jpg extension in thank link above

Big Vegetable Cous Cous from VEW. It was fantastic. The cous cous part was a bit salty and the whole thing was lacking in green so I added a mint and parsley garnish.

Marzipan, you are posting too much of the code, I go to flickr, then the picture then I right click and it gives me size options. I pick the medium and then copy the URL from the browser. For your pic, the only code you neeeded was http://farm9.staticflickr.com/8110/8616 ... 08526a.jpg you can always tell if it's mostly right when it ends in .jpg

also, if you click on full editor at the bottom of the post box you can preview it to make sure you got it right

Marzipan you used the html code! The right code will actually have the img bracket thing done for you already.

I dunno, I think I just got a mental block about tempeh rather than outright disliking it. I haven't had a block like that in years. Last one was mushrooms and I eventually got over that. I think it is one of those things where I'm going to have to just leave it alone for a while and try again in a few months. I think if I persist I will just make my mental block about it worse. As for the cakes, it was more that I plain just could not eat it. I think if I didn't have the mental block about it I would actually like them! Minds are just funny things.

I made it once before but I made the butternut squash soup from VWAV this evening because I needed something for lunch for the next few days and it was low enough labour to be able to manage it without too much energy on a work night. Really enjoyed it. Too lazy/depressed for photos though.

Planning on making muffins tomorrow night for lunch on work Friday since on Fridays we all have our lunch together.

Yes the Big Vegetable Couscous really is fantastic. I made it a few weeks ago and me and my husband fought over the leftovers. I'll be making it again soon since I have been thinking about it since the last time.
