Hello everyone, I have a number of recipes that call for raw cashews. Some to give a 'cheesy' effect, another I just found to make a vegan chocolate mousse. The problem is that my son is deathly allergic to cashews. He can have almonds, hazelnuts and peanuts. I was wondering if anyone has ever experimented with other nuts as a substitute for cashews. Thank you!

Welcome to the PPK!

I find that almonds work pretty well in most recipes, although they don't become quite as creamy and the end-result will have a slight almondy taste. Isa also has a recipe for mac&cheese with a sunflower-based cream on the PPK blog. Maybe you could mix almonds and sunflower seeds for a more neutral tasting result? For chocolate mousse, you should try a recipe that uses silken tofu, it's delicious. Coconut cream might work for applications where a coconutty flavor is appropriate.

I would probably try a mix of almonds and hazelnuts. Hazelnuts get creamy but not as creamy as cashews. I sometimes throw some tahini in cream sauces to make them creamier. Your probably going to find that your cashew substitute will vary from recipe to recipe and incorporate things other than nuts.

I've been wondering how macadamias would sub lately. They're pretty clean tasting, light in colour, and creamy.
