What is your favorite thing to do with kale? It's hard to find decent kale around here and I got some dino kale (impossible to find around here) at WF the other day and I want to appreciate it. What are your favorite things to do with kale?

Kale chips, massaged kale salad, lightly steamed kale w/a squirt of lemon juice.
Kale is probably my favorite green ever, but these are the three things I make most with it, though I eat it at least 5 days/week.

Mine are almost the same as your's, gaia 13, but I like a tahini, lemon, garlic dressing on my steamed kale. Oh, and toasted sesame seeds on top.

I love tossing in a bunch of kale whenever I make pasta with tomato sauces. Sometimes I wish it was just all kale and tomato sauce, no pasta.

I stir fry it with tofu, oil-packed sun-dried tomatoes, onions, ginger and garlic - and then splash a bit of low-sodium tamari over it. Sometimes I'll also toss in some left-over brown rice or pasta, to make a one pot meal.

I have been addicted to Desdemona's recipe for garlicky kale with mooch. I love it in chickpea noodle soup, with white beans, a splash of vinegar, and corn bread. . . . Mmmmmm, kale.

I don't know where you are in NC, appifanie, but one of the things I've been most impressed with here is the availability of good quality affordable kale! I'm in Raleigh and it's everywhere at the farmer's market, even all winter long.

I really love this braised kale on Orangette: http://orangette.blogspot.com/2008/10/p ... ogged.html . I serve it over toasted crusty bread rubbed with a garlic clove, like she suggests, but obviously skip the egg and the cheese - I just drizzle it with olive oil and sprinkle it with a little more salt. It's really comforting and tasty, the bread soaks up the broth...yum.

Some of these have already been mentioned, but my favorites are:
- kale chips with a little olive oil, a lot of nooch, and salt - citrus almond kale (sautee with olive oil + garlic, add slivered almonds, salt, lemon zest and a squeeze of juice, serve over brown rice) - caldo verde (recipe from Native Foods, but basically kale-spinach-potato soup) - steamed kale with a lemon juice/apple cider vinegar/agave dressing (Colleen Patrick-Goudreau mentioned this on an old podcast) - raw kale salad (massage with lemon juice and salt, add mashed up avocado to coat, then scallion, halved grape tomatoes, sunflower and pumpkin seeds) - with soba noodles and a sesame-ish dressing, and maybe tofu - a smoothie with 2 c kale, a frozen banana, 2 T ground flax, a bunch of frozen mango and pineapple, a date, and water - and there's a really easy recipe from LDV with noodles, kale, tomato juice and peanut butter (but I liked cashew and almond too, and I added nooch)

There's a great recipe in Moosewood Cooking for Health: kale with cranberries. I almost swooned when I tried it - the perfect mix of savory and sweet!

I want to love kale. The only two ways that it's really won me over tho are either in a raw, massaged dino kale salad with tempeh bacon or (the healthier variety) steamed and tossed with olive oil, shoyu, and lemon juice. both amazing.

Mmmmmmm kale...
I looooove the garlicky kale with tahini dressing in vwav.
Also love it in stir fries with peanut sauce (especially the vwav recipe) over soba noodles.

It's hard to branch out beyond my yummy standby:
Sauteed with heaps of garlic, then simmered. When it's almost ready, I add a splash of soy sauce, molasses, and toasted sesame oil.

Personally I don't like kale and never have, UNTIL I discovered the Massaged Kale Salad. I am now eating it daily. In fact, I crave it constantly. In mine I put lemon juice, pumpkin seeds, heirloom tomatoes (the small ones, like zebra or those small grape ones), apple, avocado, pea sprouts and some Italian type vinaigrette.

This:
____ African Pineapple Peanut Stew
1 cup chopped onions 2 garlic cloves, minced or pressed 1 tablespoon vegetable oil 1 bunch kale or Swiss chard (4 cups sliced) 2 cups undrained canned crushed pineapple (20-ounce can) 1/2 cup peanut butter 1 tablespoon Tabasco or other hot pepper sauce 1/4 cup chopped fresh cilantro salt to taste crushed skinless peanuts chopped scallions
In a covered saucepan, saute' the onions and garlic in the oil for about 10 minutes, stirring frequently, until the onions are lightly browned. While the onions saute', wash the kale or Swiss chard. Remove and discard the large stems and any blemished leaves. Stack the leaves on a cutting surface and slice crosswise into 1-inch-thick slices.
Add the pineapple and its juice to the onions and bring to a simmer. Stir in the kale or chard, cover, and simmer for about 5 minutes, stirring a couple of times, until just tender. Mix in the peanut butter, Tabasco, and cilantro and simmer for 5 minutes. Add salt to taste, and serve.
I eat it like once a week. Mmm.

Isn't that weird, how you can start craving raw kale?! I never would have believed it. I mean don't get me wrong, I just had two chocolate chip cookies for breakfast, but I am definitely having a kale salad for lunch. When you get in the habit of eating it, it just makes you feel good!
