A friend obtained some beets and we are therefore having Borscht Night on Sunday. Favorite recipes? Or recipes you think might go well with borscht? This is something I have never eaten, but I love beets.

You could make some placzki (potato pancakes), or you could make cabbage rolls with seitan. Placzki with a creamy mushroom topping are pretty great though.

teddyplanet said golabki (stuffed cabbage rolls) with seitan, but I don't even use a meat sub when I make them. I use rice (or barley), mushrooms, and onions. Golabki is fun to make, but the cabbage part can be tricky.

I eat mine with a dollop of "sour cream" and maybe some bread on the side. I don't have a recipe... beets, onion, cabbage, carrot, broth. Something acidic (like vinegar or tomato paste) towards the end. I'm sure someone else will recommend a good recipe, though.

Thanks for posting this thread. I don't like beets, but my husband is from a Ukrainian family and I think he misses Borscht. I'll have to try one of these recipes sometime...

Personally I love nalisniki...they're like a crepe but a bit thicker.

We ended up using this borscht recipe my friend found on the internet: http://www.grouprecipes.com/18436/borsc ... -soup.htmlVeganized by subbing earth balance for the butter and mimicreme for the real cream. We also subbed a huge amt of real dill for the dried, used about double the onion, and didn't mash the potatoes. It was really, really good and I recommend it.

I make haluski all the time. I use bowtie pasta rather than dumplings, though.

Ok - a little bit confusing but we have at least three kinds of beet borscht in Poland :) 1. clear beet soup served with croquet or naleśniki with sauerkraut and mushrooms 2. "the real" borscht - based on prepared earlier beet kvass and then with beets and other ingredients 3. "Ukrainian" borscht - this with beans, green beans, tomatoes, carrots and other vegetables :).
