 Post subject: Thanksgiving marinade for chicken-style seitan?

I think for our protein I am going to do chicken-style seitan cutlets, pounded thin, marinated, and then lightly breaded and pan fried. I think seitan is so much tastier when it's marinated, but I always use either balsamic-olive oil-garlic or lime juice-olive oil- garlic, and I don't think those would go well with my garlic-sage breading, plus whatever gravy we're using.

Any suggestions for a marinade that would go well with Thanksgiving flavors?

This year, I'm doing what Jdfunks does. She marinates in sparkling apple cider with garlic, rosemary, etc. I'm probably gonna marinate for 48 hours or so.

I found this recipe online. It's for a turkey, so you'd want to scale it back:

Quote:
2 cut up cloves of garlic
1/2 tsp oregano
1 tblsp salt
1/2 tsp pepper
1/2 tsp seasoned salt
1/2 cup oil
Juice of 1 lemon

Do you know why jess uses sparkling cider and not regular apple cider?

I am marinating some test cutlets for an hour in apple cider and garlic. Breading in fresh sage, whole wheat bread crumbs, salt, pepper, paprika, and nooch. Will report back.

It was so good! I pulled it out of the marinade, dredged it in flour, dipped it in unsweetened soy milk, then dredged it in the breadcrumb mixture, then pan fried it. Then served it with cranberry sauce, maple mustard potatoes and string beans from vwav, and buttered bread.

I am going to marinate everything in apple cider from now on.

This is greatness. I'm thawing my roast tomorrow so I should be marinating by Tuesday. I really hope this week goes by swiftly.
