I thought maybe we could use this thread to also talk about what we did with the produce from our CSA boxes! I'm always sort of scrambling for quick ideas, especially when they only give you a little of each veggie.

Here's how I used my latest box:
-eggplant: baba ganoush
-purple bell peppers and gypsy peppers: dipped some in the baba ganoush, used the rest chopped up in chili
-zucchini: muffins, roasted and used in Isa's pesto risotto recipe
-heirloom tomatoes: sliced up in chickpea salad sandwiches
-cherry tomatoes: broiled and put on top of the pesto risotto, also tossed some in the chili
-apples: applesauce
-peaches, grapes, honeydew melon: ate straight as snacks!

Oooh, forgot that I also made the zucchini (crab) cakes from The Vegan Table. Delish!! I had a *lot* of zucchini to use up.

Woo-hoo! CSA thread revival. :)

This week I got:

basil
tomatoes
garlic
potatoes
okra
carrots
celery
lettuce (ugh)
lima beans
edamame
jalapeno
poblano pepper
green and purple sweet peppers
banana pepper
muskmelon
summer squash

My box comes every other Tuesday, and we received it this week.

So far this week we have had:
-a huge batch of tomato pesto pasta with summer squash
-quesadillas
-fried okra, mashed potatoes, and BBQ tempeh
tonight I'm planning on making a red coconut curry with the carrots, rest of the squash, remaining sweet peppers, and some broccoli I have on hand

It's funny how my partner and I were just talking about this box is one of the smaller ones we've received, and from my memory this summer has been the lowest yeilding since I've been doing the CSA thing (three years). However, writing it all out like that, it looks like a whole bunchabuncha stuff!

Things I need help with:
lettuce. At the beginning of the year, I like salads. By this time of the year I do terribly at eating them, and actually had to compost some lettuce I haven't used this week :x
Also, I tend to make a lot of lentil soups during the last few days before I get my next CSA box. Any creative/interesting ideas on bare bones soups?

Carrots, chard, lettuce (UGH), pickling cukes, sweet onions, strawberries, and cherry tomatoes.

I'm only really excited for the tomatoes. Where are my local potatoes and sunchokes?!

I wish that I got cherry tomatoes (and green tomatoes)! But I can't really complain, because we do get about four different types of heirlooms regularly. It's the one thing that I never tire of either. I always freeze one or two a week (whole) so that I can still have awesome tomatoes during the off-season. :)

I bought five pounds of local garlic, and we roast the cherry tomatoes after making a slit in them and adding a sliver of garlic and a leaf of basil. A tiny bit of olive oil and a pinch of salt and pepper makes them heavenly.

Do you guys ever freeze fresh basil? I've been getting it in the CSA every week and I don't dislike it, but I don't want EVERYTHING I cook to taste like basil, and I'm not the craziest for pesto. I've been using it a lot with the tomatoes but I can't get through the huge bunches of it.

yes, I freeze it. It works wonderfully. I just put it in a freezer bag as is.

Also, I want those roasted tomatoes! :)

Wow, that is a super generous farm box! Can you believe I paid $44 for what I listed above?? I mean, that does include a delivery fee (they come to my door) but I feel like I could get all that produce for maybe $20 at the store or farmers' market! It's kind of ridic since I live in CA, freaking right next to the central valley. If I go through the CSA at my university I can get a modest box for $20 but the pickup spot is really inconvenient. Sigh.

Maybe you can use up some of your lettuce if you use them in lettuce cups. At a recent cooking class I attended the instructor made vegan laab and served it in romaine cups. It was really good! There's also a lettuce cup recipe in AFR.

Do you mean you are using the remainder of your produce in lentil soups? I kinda do the same thing. I guess you could also make a minestrone or use a different legume and add a grain (pinto barley, black bean quinoa). You could also roast all your remaining veggies and then puree them with some cashew cream or soy milk and make a cream of roasted veggie soup. That can be pretty bare bones but still has a lot of flavor!

I love that cherry tomato idea! Definitely going to try it next week!

For the extra basil you could dry it or make pasta sauce (especially if you have extra tomatoes) and freeze it for a CSA meal in winter.

I am extremely envious of you all with surplus lettuce :)

We've been getting so.many.tomatoes! Husband's grandparents just went on vacation for a couple weeks and brought us all their produce and the stuff from their garden that was ripe, and they brought us a huge box of tomatoes too. I guess I'm going to make a large batch of pasta sauce for the freezer today, because there's no way we're eating all of these.

I've mostly been making curries that use tomatoes as the base, because I'm not really into sliced tomatoes that much.

my box runs about $25 when averaged over the year. So I'm getting a hell of a deal. The farmers work so hard... actually one (they are a young couple who recently hired one part-time worker) of them gave birth two days before this box came to us.

I am intrigued by your cream of vegetable soup idea!

Has anyone else made lettuce cups at home? Any tried & true recipes I should check out?

End of the summer is getting a little repetitive, but this week:

1 red pepper

red potatoes
cantaloupe

Going to go to the farm's Upick this afternoon and get some basil (gave the bunch we got to the person that I split the share with) and cherry tomatoes/romas.

Why aren't we doing this anymore? We're getting a lot of winter squash and sweet potatoes now, so ideas that use a lot of those would be great. I'm set on "1 sweet potato" in this or that, but we have SO MANY. I'm doing soup this week. Maybe pie?

Umm... I get my CSA every two weeks and last week was the week. Let's see if I cn remember what was in there!

a pumpkin (this totally made my skin feel terrible after I cut it up!!)

I feel like there are things I'm forgetting. This week I've been sickly and overly stressed, so I haven't been cooking like I should be. Fortunately, we're getting into the land of lots of storage produce. :)

This week we got little hard pears (so delicious!), delicata squash (my fave squash!), red leaf lettuce, leeks, beets, purple potatoes, braising greens, radishes, carrots, parsnips, turnips, garlic, and shallots. Lots of greens with the roots!

We're halfway through our one month season extension, and it's sweet potato city.

Sweet potatoes (5 lbs)
Banana peppers (2 or 3)
Hot peppers (a few small)
Joi choi (2 heads)
Leaf lettuce (2 bags)
Kale (2 bunches)
Green onions (1 bunch)
Radishes (1 bunch)
Acorn squash (2)
Spaghetti squash (1)
Bell pepper (2)

I probably have 20 pounds of sweet potatoes and around a dozen winter squashes of various types saved up. I'm not the biggest fan of either, so I've been slow to use them. I'm hoping the soups in Viva Vegan will help me love them!

Grrr. They messed up my last delivery and I only get a box every other week so I've been CSA-less for a month! For some reason, and not because of the missed delivery, I got a bigger box this week!! Husband doesn't like over half of them, either, so good thing he's out of town.

sweet fingerling potatoes (8 ct)
sugar pumpkin
fennel (3 ct)
gold beets (2 bunches)
radishes (1 bunch)
broccolini (1 bunch)
carrot bunch
radicchio (1 head)
kale
lettuce (5 bags!!)
Italian parsley

I've already made a massaged kale salad with the kale, some of the fennel, radishes, and carrots. The lettuce, beet greens, and radicchio will be in salads over the next week, the broccolini I will probably use to dip in hummus. I'm going to use the sweet potatoes, leeks, and fennel for the potato-fennel soup on the ppk blog. The parsley and pumpkin are going into the chimichurri recipe from Isa Does It. The beets???? I already have a bunch of roasted beets in my fridge so maybe I will make the borscht from isa does it? I've only made borscht once and didn't like it so hopefully Isa's recipe will be a success!

Sometimes I just make them as a side dish, sauteed in in coconut oil with a dash of cinnamon and salt until they're broken down and a little mushy.

kohlrabi

Really surprised at the lack of winter squash, but I'm kind of sick of it, so definitely not disappointed.

We usually get our box every other week, but we just started the winter share, so it ended up just being a week between boxes this time, AND we went away for the weekend, so I'll be rushing to finish the more perishable items before they go bad. We have a massive amount of sweet potatoes this week and still have some left from last week, so I guess I need to bake and freeze a few. Anyway! This week's box:

acorn squash
new potatoes
sweet potatoes
