 Post subject: simmer soy milk?

My daughter and I are allergic to dairy. I want to make Alton Brown's mashed potatoes. I have baked with soy milk but never used a recipe that requires it to simmer for a while. Will that work with soy milk?

I'm not sure what the recipe entails exactly, but for something like mashed potatoes it should work just fine. just make sure to get an unsweetened soymilk so it doesn't affect the taste of the mashed potatoes.

It should work! I like knowing the temperature because I'm bad at judging by eye still, and a simmer is about 180 degrees F if that helps you.

Thanks! It is for mashed potatoes. I didn't even think of getting unsweetened we usually use plain.
