Everyone always seems to think stuffed peppers are the go-to food to feed vegans at an omni gathering, but I have never in my life eaten a stuff pepper. I would like to correct that. What's your favourite way to stuff a pepper (with recipe)?

It kind of throws me off because growing up we ate stuffed peppers but they were stuffed with ground beef and topped with bread crumbs. Nothing vegan going on there.

Veganly - I really liked the creole stuffed peppers from Vcon and the black bean and quinoa stuffed ones from VWAV.

Black beans, chopped tomatoes, quinoa, corn, cilantro, cumin, coriander, chili powder. Layer a few scoops, then some daiya cheddar. Repeat until it's full. I like them best on the grill 15-20 min, but you can bake them also.

This is my go-to recipe for summer gatherings. I make a pan of cornbread and a quick salad. It's always gone over very well!

The only stuffed pepper I've ever eaten is the creole stuffed pepper from vcon. They are sooo good!! I do replace one can of beans with rice instead though.
