Something featuring fennel bulbs. I have not found a single recipe calling for fennel bulbs other than the roasted fennel and shallots salad in Vcon, but it would be awesome! Anything, a side or a main or whatever. My mum used to roast them covered in cheese, and that's pretty easy to veganize, but maybe something more creative?

Anek, do you have Vegan Eats World? Over the weekend I made the olive, orange, fennel salad (don't recall the exact name) and it was light, summery, and required a fennel bulb. And it was delish.

Potato Pancakes please! I was in Cincinnati last week and we walked by Izzy's and their potato pancakes are awesome, but I was told they are not Vegan.

I do! But I hate olives :/ And it's a salad... which is ok I guess, but I am hoping for something more substantial.

Use the blog butternut squash alfredo sauce to make lasagna. It is pretty much the best thing ever. I brought it to a work potluck and they all now think I'm the most amazing chef ever (not even close). People ate that before the ,eat/cheese lasagna!

I think I mentioned this somewhere upthread, but please PLEASE do some recipes that feature Soy Curls and Jackfruit (not together haha)

I have 5 bags of soy curls, and 4 cans of jackfruit in my pantry, just waiting to be used. I am tired of all my standby recipes.

I would really like a Jackfruit Ropa Vieja. That would be so so so awesome.
