Gorgonzola cheese, or a creamy Gorgonzola sauce. I'll take anything that tastes like Gorgonzola.

Why does spell check insist it's not spelled right without the capital G?

Because like Parmesan (and other cheeses and stuff like Champagne), it's named after the place that it is made (Gorgonzola, Milan).
