I've been trying to make some muffins or small breads for make ahead breakfasts that will be easy to grab when we are in a hurry, but I can't stand the thought of having sweets for breakfast all the time. I know savory muffins are a thing and I remember having a muffin cookbook when I was a kid but all I can think of right now is corn muffins with cheese. Can anyone recommend any excellent recipes or ideas?

Peanut butter and herbs with a bit of cayenne and paprika make lovely savoury scones. Grated carrot and cilantro/coriander with plenty of salt and pepper is a nice muffin flavour I've tried.

not exactly savory, but not super sweet, the millet soda bread from VCON makes a super hearty breakfast muffin.

I've been making a lot out of 150 Best Vegan Muffin Recipes lately. Everything I've made has come out successfully, with a huge variation in sweetness, and there are lots of savory options. I've been on a bit of a muffin bender and I think it's a great book.


ETA: I've been making most of them in Jumbo Muffin form, which for me is a more realistic size for a meal muffin. You can convert just about any recipe by increasing the time by about a third. So a 22 min. recipe will usually get done in about 30 for jumbo muffins.

The rosemary muffins from 150 Best Vegan Muffins are really good if you add extra rosemary (and use fresh if it doesn't already call for it).

These are what I was going to suggest too!
Also, the v'con skillet corn bread makes good muffins, especially with the variation add ins (corn and either diced jalapenos or onions, can't remember but why not do both?!). I bet they would also be good with some cooked whole black beans stirred into the batter to up the protein content. Oh, and/or you could stir in some browned soyrizo or tempeh chorizo from VEW or seitan chorizo from VV! Ok, now I've got to make black bean and chorizo corn bread muffins!

I love the savory muffins with olives in 500 vegan recipes.

Yes, I love this book! And I love savory muffins. So so much. The coriander rye muffins in VEW are very good. Also, this is my most favorite savory muffin recipe. It's in 500 Vegan Recipes. Spicy chickpea flour variety!

Not exactly a muffin, but I like mini crustless quiches. You make them in a muffin pan, so they're like muffins made out of tofu, which doesn't sound good, but they really are! (Even omnis like them.) Fat Free Vegan has a recipe on her blog which you can play around with what vegetables/spices you add. (I usually do an asparagus-mushroom and a spicy spinach-artichoke. I have a bacon, apple, cheddar one in the works.) I'd like to experiment with making a quiche or frittata from Vegan Brunch in a muffin pan, but I have yet to do so. I think it'd work.

If you have any success with that bacon/apple/cheddar one, I would be super interested to hear how you made it. That sounds so good.
