We’re planning to bring Igor bars to a Canada Day picnic July 1 and need some help selecting the vegan recipes for the layers. Because we have to canoe 2 hours to the picnic (and 2 portages), the bars need to be fairly solid and keep well with a few coldpacks.

Layer plan :
base is chocolate chip cookie bar
caramel with nuts
Rice Krispie bar layer
chocolate fudge layer or just melted chocolate
top with Peanut ButterCup bits or other Bon-Bons


Questions:

Which vegan chocolate chip cookie recipe is more bar-like – not too crisp where the base would not crumble when cut ?

I can’t buy vegan caramels in my part of the forest so I need to make the caramel. Any recommendations on a caramel recipe ? Isa and Terry’s recipe for the caramel-pecan bars is wonderful but a bit too gooey for canoe transport.

Any recipe ideas for Rice Krispie bars but without vegan marshmallows?

Looking for ideas for the chocolate fudge/bon bon layer on the top. Melted chocolate would likely be more sturdy but less fancy. I’m tired of the “vegans only eat rabbit food” bs comments so the WOW factor is an important design consideration here.

All recommendations welcome !

It's super easy. All you do is blend a few ingredients together, and voila, it tastes like caramel.

I think what I would do is
vegan with a vengeance chocolate chip cookies or something with coconut oil, so you have a solid fat in the base.
Since there's already peanuts, I'd use the PB caramel from veganomicon
to continue with the peanut butter theme, you could make PB krispie bars, and i think there are a million recipes for those online.
you could do a ganache on top rather than just melted chocolate, but I don't think you'll need to worry about people thinking you only eat rabbit food if you don't do a super fancy topping. you could put sprinkles on top or some other chopped up candy or even just more peanuts.

Looking at your link, I think the chocolate chip cookies recipe from the cookie book would be fine. It looks like it is a thin crust layer rather than a thick bar layer.
I would also use a PB caramel or something. I've never had a vegan caramel sauce that was thick enough to stand up to slicing in a bar.
I also think just melted chocolate chips for the topping is fine. The picture in the link doesn't look super fancy so I'd try to stay true to that.

For travel, can you simply leave the bars in the pan and then cut and serve when you arrive? That might be easiest to keep everything in it's place.

Thank you for the excellent suggestions. I'm going to try a few test runs in an 8x8 pan before July 1. Will post experiment results.

I luv the PB Caramel - don't know how I could have forgotten about it !

I've done the VCIYCJ chocolate chip recipe in bar form before. It turned out pretty well, as I remember, though it was a bit rich, but since that's the point of these bars I won't tell you to reduce the oil or sugar.

I recommend a cheesecake layer. Because I like cheesecake.

Can you get ricemellow creme where you are? You could make the rice cripsy layer using that, or you could just do a layer of marshmallow fluff without any puffed rice. Or, I've seen many variations on vegan rice crispies using brown rice syrup and some kind of nut butter. I've never tried it myself so I can't recommend a recipe, but you can google it.

I've never heard of Igor bars before. I guess because I'm not a gamer. Anyway, good luck.

There's a rice krispie in Vegan Cookies that doesn't use marshmallows. I love ijdi's peanut butter everywhere idea!
