I bought a massive bag of the stuff, because it was cheap and I thought I saw it over and over when I first bought Vegan Indian Cooking. Turns out she only uses like a tablespoon at a time though. Anyone know of any good recipes that use lots of it? Internet, cookbooks, whatever.

As in the split kind? I use it in, er, dal. Obvies. It think it's also good for hummus because the skins don't get in the way of ultra-smooth blending, and good for falafel because the skins don't get in the way of the starches binding things together. Actually, if I didn't have to go so far out of my way to get it, I'd probably sub it for chickpeas in nearly everything.

Ooh yes, I just bought a great big bag of this too. So far I have made... plain chana dal, and dal palak. Neither from recipes, but easy to wing with great results.

The falafel idea is great! Doing that next.

Oh, I love Chana Dal.

I have Indian Vegan Cooking (confusing I know) and there is a nice Chana Dal recipe that is made with spinach. I adapted it a bit:

Basically, cook the Chana Dal with some garlic, ginger, and tumeric. I use a pressure cooker. Cook down until most of the liquid is absorbed, but not all. some mush, but some still whole dal.

In a skillet, cook some onions in oil, adding indan spices (whatever you like: I like mustard seeds + some cumin + some cayanne) then add a bunch of defrosted chopped spinach. Cook down.

Add to chana dal, heat and eat so so so good. I must make again soon.

I really like the Indian Vegan Cooking book. I hope Vegan Indian Cooking is just as good.
