 Post subject: What should I do with all this cilantro?

I have some pine nuts so I'm thinking at least one bunch will go into cilantro pesto, but the rest? I got three bunches in my CSA, what in the world can I do with it all?

I love that we can ask these questions all over again now.

Well my answer would have been pesto. Make it and freeze some for later.

Toward the bottom of this post, there's a recipe for recaito. Basically, it's a cilantro/pepper/onion/garlic mix that is used as a base for a lot of latin meals. It's fab. There's a similar recipe in Viva Vegan.

Tonight I made the VWAV chipotle corn black bean stew. It uses about a cup of cilantro. So warming and tasty. Went over well with the BF and his mama.

Whaaaaat? How on earth did I miss this?

Also, +1 on adopting a guinea pig. That is the real solution here.

I know you mentioned pesto, but my *favorite* cilantro pesto uses pistachios instead of pinenuts and you also put in garlic and jalepeno peppers and (of course) olive oil and salt. I make big batches and freeze. Then I can thaw out what I want and later use it for soups, in burritos, etc. Yummm!!
