 Post subject: Cold packed lunch ideas for Tofurky beer sausages?

Any ideas? I'd like to cook them and then do something with them for work lunch that would not require microwaving.

Something cheap and with ingredients that I can pick up at my nearby little supermarket.

Thank you. We both have fridges at work, but both of our lunch rooms are not air conditioned so hot lunches are not appealing.

You could throw some in a tofu scramble and put it in a wrap, I find scramble wraps are pretty good cold.

I make my own sauerkraut, have been making it for years and it has been nearly as long since I've eaten it hot. I eat that shiitake like a salad and when I was an Omni I used it like any cold condiment and piled it on sausage. I'd make a cold sandwich out of sausage and homemade kraut with extra kraut and mustard and eat the whole damned thing cold. I think it was more of an excuse to eat a pile of cold kraut that anything, kind of like how fresh baked bread can be an excuse to eat a whole stick of butter sometimes but I digress......

Cook the sausage ahead of time. Pack it cold and pack some nice sauerkraut too (don't forget mustard). I know it's too late for homemade but maybe there is something local that is good and the crunchier the better, remember this is an excuse to eat fresh, cold sauerkraut. Make a sandwich with everything cold. Who says you can't?

I was going to suggest saurkraut too. Or just cabbage. I once made stuffed cabbage and didn't know what to do with the leftover par-boiled cabbage, so I chopped it up, sliced some beer brats, fried the beer brats slices till they were a little browned on both sides. Took those out of the pan, put in some onion & garlic in oil, put the cabbage in, little black pepper, and then the browned beer brat slices. It tasted really good. It also made me really farty.

Slice thinly langhtwise to turn into lunch meat. Put on a sandwich with anything else you usually enjoy or think would be good: lettuce, tomatoes, onions, pickles, mustard, veganaize, hummous, cheeze, roasted red peppers, sprouts, etc.

I don't know if this is your thing or anyone's thing because I've only seen my grandmother do it. But she LOVES cold slices of kielbasa with mayo. Just sliced and dipped. I remember it being pretty good actually.

This sounds disgustingly good. It's not as if Tofurky sausages are a health food, why not just slice them, fry them and dip them in mayo - holy crepe! I love mayo, and am always looking for ways to eat more of it. Thanks GraciaKai! :)
