 Post subject: Can I sub vital wheat gluten for bread crumbs?

So I was thinking of trying a new veggie burger recipe. It calls for a can of black beans, some bell pepper and onion, 1 egg, some spices, and .5c bread crumb. I can easily use flax for the egg. As for the bread crumbs, I was hoping to increase the protein content of the burgers. Do you think I'd be able to sub an equal amount of vital wheat gluten and get good results? I figured it would also act as a binder... Any thoughts are appreciated :)

Do you have Veganomicon? There is an already vegan recipe for black bean burgers in there (which calls for VWG and breadcrumbs) - I'd at least reference it so you know you'll have an end result you're happy with.

I would guess you would probably need less vwg than bread crumbs. I'd start by adding less than you think you need and see how the texture turns out, if you are comfortable with experimenting.

Too much VWG and you get weird squishy burgers. We made that mistake once and while they tasted good, the texture was straight-up repulsive, like beany chewing gum. So I'd be careful and try it out before planning dinner around a recipe you've modified...

Faye, not to discourage your veganizing of a recipe that interests you, but to add on to what Nicole is saying there are many really great black bean burger recipes online that are already vegan. If you're interested in a burger with more protein, how about a black bean quinoa burger?

when I need texture, I sometimes use crumbled TSP in VWG recipes
