hello friendlies,

last night my buddy came over and dumped a bunch of rainbow chard, a bunch of red beets (with inedible greens), and a bunch of fresh dill in my kitchen, saying "here, you can have these, I don't know what to do with this stuff and I don't think I like any of it anyways." now, I love ALL of these ingredients and I have a lot of ideas about how to use them, but I was hoping that you all might share some of your most favorite, delicious recipes that might convince my friend that he loves these ingredients as much as I do! hit me with your best shot?

roasted beet and chard salad with lemon, olive oil and dill? I don't have a recipe, but I would roast the beets, blanch the chard (or not I like to eat it raw, depends on your preferences) and toss those together with some dill, olive oil and lemon.

here's what I ended up making! quinoa pilaf with sauteed chard, roasted beets, and caraway, and pan-fried tofu in a creamy lemon-dill dressing. AND the meal was a success! brian scarfed down the plateful and asked how they could replicate the dishes at home. "I love beets! I can't believe I love beets! OMG, dill is so good!"
