Beverages with mouthfeel can give a perception of being sugary. Perhaps it has some body that gives you that perception. Also the fermentation process might produce flavor enhancers. I am only guessing here. On a related note I made a batch of water kefir with apple juice (carbonated), it's awesome.

As a kombucha manufacturer I am upset to say that these top kombucha brands all blatantly lie about the sugar content of their product. There are about 3.5 calories per gram of sugar and nothing else in kombucha with any significant caloric content. These brands have 16- 30g of sugar per 8oz

If you would like to test the actual amount of sugar in any kombucha without lab equipment (although you need a scale that can weigh whole grams) do this: Double boil 8 ounces (without sediment is better) of kombucha until all the water has evaporated and weigh the bowl with what's left. Clean the bowl and weigh again. The weight difference will give you a very close idea of the sugar content per 8 ounces.

Then please complain to the FDA about mislabeling.

The number one brand in the country does not even list sugar as an ingredient on their bottle.

This fascinates me so much! Now I wonder about my homebrewed kombucha - it doesn't taste as sweet as the storebought brands, but I'm really curious how much of the sugar is actually used up during fermentation. I've always thought I was doing myself a favor drinking kombucha instead of more sugary drinks, but now I'm not so sure. (I won't stop drinking it though, haha.) I'm also curious about local kombucha breweries, which seem like honest wholesome businesses but also claim their product has little-to-no sugar...

How do companies get away with lying about their products' nutritional content? Is there no system in place for verifying that information? I have no idea how the FDA even works, honestly... this seems a little worrisome!

Are they only required to list the amount of sugar left after fermentation? I agree that it tastes way too sweet for the amount of sugar listed, but I'm sensitive to sugar because of a metabolic disorder, and it doesn't make me feel like I've had a soda or juice or anything like that.

This post is referring to water kefir, not kombucha, and the person answering the question is not any kind of professional, but you might find it interesting:

4 tablespoons of fructose powder wold be 185 calories

20% of 185 calories would be 37 calories per the whole quart

12 fluid ounces of Classic Coke is ( 1 can ) would be 143 calories.

I shouldn't go on forums when sleep deprived. I misread kombucha as kim chee, and the mentions of fermentation didn't help. Imagined everyone guzzling fermented chili sauce.
