This is the official discussion thread for week 3 of our blog cooking challenge.

During this week period from Monday July 15 – Sunday July 21, choose 3 recipes (or more or less depending on your schedule) from Oh She Glows (http://ohsheglows.com/). Come back here to tell us all about the recipes you made and post photos** if you can!

As a note, this is a 10 week blog-explore-along challenge, where we try recipes from 10 different vegan blogs and report back.

I made The Over The Rainbow Cabbage Salad with Tahini Lemon Dressing for a potluck last week and it was incredible. It was devoured by the omnis, vegans and toddlers alike. It was my favorite dish there and I had to restrain myself from eating it all in a corner growling at the other mothers to keep away. Plus it is gorgeous! She says you could pour the lemon tahini on anything and it would taste good so I ended up using my leftover dressing on (1) a warm quinoa and lentil salad, (2) a kale salad and (3) breakfast lentils. It is amazing, versatile and so easy - it has to be my go to favorite dressing ever. http://ohsheglows.com/2011/12/14/over-t ... -dressing/

I wish my husband would be open to salads for dinner. I do have a head of cabbage I need to use up so I may try that Over the Rainbow cabbage salad though.

I plan on making the following 3 recipes:
Thai inspired salad with roasted chickpeas (I'm considering trying to roast the chickpeas outside today as we expect no rain)

I feel like I'm cheating this week because this is one of my favorite blogs and I've made so much, but I'm trying a new recipe, and trying some variations on ones I've had before.

I made the basil cashew cheeze from this recipe- http://ohsheglows.com/2012/08/21/easy-r ... ws-awards/

I'm not a huge fan or tortilla pizzas though since I don't think tortillas really substitute the pillowy goodness of pizza crust. So instead I made grilled flatbreads and had this as a spread on top. We had them with grilled veggie kabobs since, hey, we had the grill heated already. It was awesome and my omni hubby and BIL ate it all, which was awesome, but also a bummer because no leftovers for me.

Both so good!!! I love this blog SO much. One of my favourites is the enchilada casserole (http://ohsheglows.com/2011/12/13/naught ... casserole/) and the enchiladas (http://ohsheglows.com/2011/05/04/vegan- ... m-sauce-2/).

My Roasted Buddha Bowl last night was awesome. I made it with roasted broccoli, cauliflower, baby carrots and Brussels sprouts. Had chickpeas, quinoa, and of course the sauce (a variation of it).

It even looked very pretty, but I was too hungry to take a pic.

It was pretty fast to cook too, since I blasted the veggies at 420 in my oven. I love bowls, but need inspiration or a recipe to start from.

Today I made the knockoff Rolos.

They were so easy to make, the texture is really good, very chewy and toffee like.

The taste, to be honest, is dates and peanut butter. Not Rolo. But they are good and certainly made a change to have.

(Making them made my processor hot and smoke too but hopefully I stopped it before it completely broke)

I'm going to try to make the Chilled Dark Chocolate Pie (because I have awesome mini-tart pans), the Rainbow Pad Thai Salad, and the Butternut Squash Mac. Can't wait to try them all. Her recipes always look great, but I haven't made much off her blog yet. (Also, her veggie burgers are AMAZING - my MIL makes them, and her omni partner and my omni partner both love them.)

For those of you in need of snacky things, I just want to put in a plug for the dark chocolate cherry date ball thingies. http://ohsheglows.com/2012/03/28/dark-c ... ok-review/ They are calorie dense, so don't be fooled. But I make them for my DH for days when he can't eat lunch, and my DS who is a growing 3 year old and can use all the calories he can get. I often line a loaf pan with plastic wrap, press the dough in, freeze until hard enough to cut, and make into bars instead of balls.

Also, the cranberry banana oat bars are awesome. http://ohsheglows.com/2010/12/24/health ... -oat-bars/ Same DS who hoovers up the date thingies loves these. So much so that his third word was "bar" and at 1 year old he would stand in the kitchen and just yell bar over and over until I came in and gave him one. I do usually cut the sugar in half on those though and find them plenty sweet for my taste.

Ooooh, these look good. I might make these for my boys. I'll be sure to halve the sugar, since it sounds like they're still sweet enough!

I'm having a harder time with this blog because almost all the stuff that looked good to me involved maple syrup and I'm almost out and too poor to buy more at the moment. I'm going to use the last of what I have to make the apple pie muffin top things (http://ohsheglows.com/recipage/?recipe_id=6001703) for supper tonight, probably with popcorn on the side.

Also tried the lemon dill tofu which was okay but my tofu didn't get nice and browned. I think I'd have gotten better results with baking the tofu. Loved the dressing/sauce, though.

I made the avocado barley risotto, and I hate to say that I did not care for it. I had previously made the avocado pasta it was inspired by and didn't care for that either, but I wanted to give it a second chance and was hoping the barley would fix the texture issue I had. Nope, still don't like it.

I also made the crispy baked tofu, and that was awesome. Super crispy. I might let my tofu sit in some veggie broth for a while before I bread it next time just to get some flavor all the way through the tofu, but the crust was great and with a little BBQ sauce, I loved them.

Agreed. I think of them more as "twix inspired" rather than twix exactly, but I bet if there was a true cookie crust instead of the rice crispies we'd be on to something... But I like these for what they are and have made them a couple times now.
