This is the official discussion thread for week 6 of our blog cooking challenge.

During this week period from Monday August 5 – Sunday August 11, choose 3 recipes (or more or less depending on your schedule) from Good Good Things (http://good-good-things.com). Come back here to tell us all about the recipes you made and post photos** if you can!

As a note, this is a 10 week blog-explore-along challenge, where we try recipes from 10 different vegan blogs and report back.

Here is the recipe section, and I have to say, I love that everything she makes is really easy and doesn't use expensive or esoteric ingredients. http://good-good-things.com/recipes/

Her seitan is my go-to because it always turns out amazing and I think its foolproof. Also lovelovelove her pinto burgers and her coconut bacon! And we make her mushroom cream sauce at least once a month - super-easy and so yummy.

I think its going to be the Pecan Crusted Seitan, mushroom cream sauce, and the pesto (because I have a batch of parsley in my garden that needs eating!)

I made the Kinda dirty rice last night. I scaled back the cayenne but I wish I had scaled it back a bit more to allow for some hot sauce (Frank's or Texas Pete's). I served it with kale. We like hot but I think the recipe may be too hot as-is or else I just didn't add enough rice.

Also, I think that some celery and/or bell pepper would've been a nice addition. Overall, an easy dish and I think I should do more flavored rice/bean blends like this.

I also plan to make the almond coconut curry and the quinoa pasta with sundried tomatoes and broccoli.

We make the almond butter curry on the regular around here. It is super yum! Highly recommended.

I can't wait to make that pecan crusted seitan, i've been vegetarian since before the pecan crusted trend as well and haven't ever had it. Mushroom cream sauce also looks great and is on my list. Thirdly, pepper seitan! I like that I can afford to make pretty much everything on this blog, even though the pecans will be a splurge if I buy them.

This one was hard. Not a lot of recipes. I made the taco roasted chickpeas and pumpkin pie pudding so far. The pudding was great!

I made the almond butter coconut curry last night and it was really good.

I did make a few changes
1) added cayenne for a little more heat
2) used canned tomatoes instead of fresh
3) added 2 extra cans of chickpeas, I like my starchy veg to bean ratio to be pretty close to each other.
4) omitted agave, added a dash of maple (we don't really like sweet/savory things but I didn't want to alter the dish too much)

Overall a pretty good base for a curry dish, nice and creamy and my husband said he really likes potato curries so he was a fan.
