I was gifted a big haul of either banana peppers or Hungarian wax peppers by a friend. They are mega spicy whatever they are! What would you do with them? They are far too hot to eat straight up.

Chili !!!!!!

I like my chili hot and sweet so I would balance all that ├╝ber spiciness with some fresh apple cider and some brown sugar. Apple cider is my secret chili ingredient.

Use them for the jalapeno and garlic grits in Vegan Brunch! That's how I've been using all of mine and it's incredible.

Maybe a large batch of Thai-style green curry paste? Made in the blender or processor with lemongrass, ginger, garlic, shallots, cilantro stems and leaves, (thai) basil, lime zest, a pinch of cumin and coriander etc. Then freeze in little bags.

You could also chop them up an freeze them for later. Or dry them.

We've been getting unknown hot peppers in our CSA, and I've just been using them like a jalapeno or serrano in whatever I happen to be cooking. They're bigger, so I might just use one where it calls for two or three.

I was also going to suggest pickling.

I just had my first experience with semi-pickling. I made hot carrots (but they were not so hot - I needed more peppers). But easy and yummy. I will be making them a lot.

Basically, get a couple of cups of white vinegar, and some sugar (less than 1/4 cup) and boil. Then add couple of cups of sliced or baby carrots, and/or cauliflower. Let boil for a few minutes. Then add your peppers (sliced maybe in half?) some sliced onion, some garlic cloves, and peppercorns (maybe some oregano if you feel like it). Let cool, then pour in a jar. Then eat. Better after a day in the fridge.

If I were you, I would do this with the peppers! yum.

I concur with the pickling. I always have a jar of sweet pickled hot pepper slices in the fridge.
Easy and delicious.

My friend infused some vodka with hot pepper (you only need one or two, depending on how much vodka you're infusing) and it is the BEST vodka for bloody mary making.

ooooh! These are amazing ideas. I bought hominy grits today to make the jalapeno garlic grits. I'm not even a spice wuss, but I ate a chunk off one of these bad boys and just about burst into flames!
