This is the official discussion thread for week 8 of our blog cooking challenge.

During this week period from Monday August 19 – Sunday August 25, choose 3 recipes (or more or less depending on your schedule) from The First Mess (http://www.thefirstmess.com/). Come back here to tell us all about the recipes you made and post photos** if you can!

As a note, this is a 10 week blog-explore-along challenge, where we try recipes from 10 different vegan blogs and report back.

Made her mushrooms and tofu en papillote with miso and rosemary. Found it too fussy for the results and surprisingly a bit lackluster.

Got a little blindsided this weekend because I didn't expect to go grocery shopping on Saturday but did and didn't pick out any recipes to make so basically bought staples. I'll look through the blog but I'm expecting that I wouldn't have anything for recipe making.

I'm not participating in the challenge, but I love that blog. It's so beautiful! I will be watching this thread with interest because I haven't made any of her recipes yet.

Ooooooh, lovely blog! I don't think I've seen it before. I like the looks of the panzanella, so maybe I'll make that later in the week, if I get to baking a loaf of ciabatta. (If the heat level in the apartment isn't too bad, that is!) Everything looks so fresh and delicious. I might have to look through the recipes and see if I have ingredients for anything, because I also went grocery shopping already. Hmmm...

I made the humble chocolate cake with a peanut butter frosting instead of Biscoff. Now I really want Biscoff spread. Ugh.

This is a beautiful blog, but it seems like her summery recipes are all just salad. Not that I'm against a nice salad but I need entree ideas for summer, not just sides.

I made the grilled potato, lemon, and zucchini salad with romesco. http://www.thefirstmess.com/2013/07/18/ ... co-recipe/ I upped the amount of green beans and threw in some chickpeas and made it a meal. I really liked it. It was simple, but filling and good. I would make it again.

Tonight I had the orange and ancho tempeh tacos with ruby grapefruit slaw. http://www.thefirstmess.com/2013/01/09/ ... aw-recipe/ Also really good. My cabbage was a bit bitter, but that wasn't the recipe's fault. My only complaint is that there is actually no ancho whatsoever in the recipe. I added some hot sauce on top of my tacos, so it was fine, but she needs to either edit or rename.

I love this blog! But I'm not home this week to cook, boo. I do really want to try the empanadas with chickpea flour, though.

Also, xanthia, you are awesome. Always right in there with photo documentation too--I'm so impressed!

Last night I made the lemon roasted tofu and kale. I can't remember what the recipe is really called. I had it over basmati rice that I cooked in veggie broth. It was really good. The kale on it's own was too lemony, but everything together had a nice balance. Good, filling meal and my hubby said he would eat it again, so that's a win.

Yesterday I made the Spicy Red Lentil Spread. It's good, although I did find that I had to add a bunch of seasonings to it. It definitely needed salt, and some agave, and I threw extra cumin in. Still, it was simple to make and it can be used in so many ways.
