Cadry's Instagram pic last night made me remember that I have never had a breakfast burrito. They seem really fun and yummy, but I never remember about them. Whenever I think of special breakfast, I end up making waffles or something like that.

So, now I want to make myself a BB... So tell me about your favorite combos and ingredients and breakfast burrito technologies.

I like to think I know a thing or two about burritos. When it comes to making them breakfast style, I usually stick with a tofu scramble base, maybe add some beans or sausage-y type crumble. Avocado/guacamole is essential. The one thing that will take any burrito over the top is using quality flour tortillas. Try to get fresh made, or make them yourself, it's pretty easy!

Yay! Jacob makes a breakfast burrito every time I do a tofu scramble and he's come up with such a yummy mix:

-tofu scram (we do red onion, bell pepper, broiled and minced grape tomatoes, minced shittakes, tamari, fresh thyme and basil, and a few Tbs of Daiya so it sticks together)
-Vegan Brunch-esque sausages (I sub VWG/half TVP, pureed cranberries, a traditional sage-based spice mix, add a little more water for the TVP, and spread the mix flat on a baking sheet to bake a while in the oven, then break it into crumbles)
-ripped up hashbrown patties from Trader Joe's
-avocado slices
-pico de gallo or other salsa (I prefer mine without 'cause it covers up all the other flavors!)
-pine nut crema from Viva Vegan
-Aardvark hot sauce

This is our recent incarnation of burritos and it's my absolute favorite! I'd really like to do homemade tortillas, too! Maybe I'll do a MoFo post on the scramble and sausage crumbles, because they've become our default recipes and are so dang good!

I make breakfast burritos with tofu scramble, sausage (crumbles of seasoned Gimme Lean or cut up bits of Field Roast sausages,) and home fries or roasted potatoes. I like to melt a little Daiya (verrry little) on a tortilla in a frying pan so the tortilla just starts getting a little crispy, then stuff it with scramble, sausage, potatoes, a bit of guac if I've got some, salsa, cilantro, maybe some jalapenos. If I'm not eating it right away (lots of times I make a couple with the leftovers from a big batch o' weekend breakfast, I just roll them up in foil and refrigerate. My cousin made huge batches of b'fast burritos for a big family gathering a few years back and froze them. Her vegan ones had fauxsage, edamame, sauteed mushrooms/peppers/onions and hot sauce and they were tasty and survived freezing and reheating well. I keep meaning to make a big batch of them, but it never happens.

Thanks to a couple of trips to Austin, I also change it up sometimes and do breakfast tacos. I like to use corn/flour blend tortillas for those because the ones I can find are a little bigger than most corn tortillas and hold up a little better. Same kind of stuffin' usually (though never Daiya... not sure why, maybe because I'm trying to recreate the Bouldin Creek breakfast taco experience.)

IMO, potatoes are essential. Hashbrowns will do in a pinch, but nothing beats tator tots.

I like some or all of these fillings:
-scrambled tofu
-spinach
-nooch sauce and/or a tiny sprinkle of daiya
-guac or avocado
-sausages/crumbles/etc
-potatoes
-black beans
-a fruity salsa or sriracha

Super good as breakfast pockets too. Like pizza pockets, except better.

I don't really do burritos in general because I prefer to use my tortillas as utensils but when I think of breakfast and tortillas, I think of soyrizo and potatoes.

I'm still so amazed that you've never had a breakfast burrito! Breakfast burritos are often a "leftover meal" for us, if we've already had a tofu scramble one day and there isn't quite enough the second day. Once you've put the leftovers into a tortilla with avocado, it fills it out a bit. Roasted potatoes really make a breakfast burrito for me. Most of the time I don't include veggie sausage; however, I've been really into all of the Upton's products lately. The Italian seitan & seitan bacon are both terrific in BB's.

Tofu scramble (made simply with bell peppers+onions+jalapenos or green chiles, and tomato), your favorite cheese or cheesy sauce, black beans, salsa, roasted potatoes or hash browns, guac, and hot sauce!

Fried potatoes are where its at, along with tofu scramble, black beans and avocado.
I once made one with rice, sausage, cauliflower and potatoes that was really good.

I love my BB's with leftover Spanish rice (it has onions and bell peppers in it), cheddar cheese shreds and sausage of any kind. Hubby likes his with re-fried beans and cheddar cheese shreds.

I also believe the best BB's start with the best tortilla's available because if you have a crappy tortilla, you will not enjoy your BB.

I agree, and I don't even really like rice or potatoes in my breakfast burritos (or tofu scramble, but I am a scramble hater). I like fresh stuff, so something like the sexy tempeh avocado arepa filling from Viva Vegan along with a fresh (maybe fruit?) salsa, and maybe some beans.

I'm weird though. I don't really like soyrizo or any scrambled tofu ever.

I'm really into breakfast burritos. Didn't know it existed until I signed up on ppk. I like pretty much what everyone else has already mentioned:

Scramble (I've made it with chickpea flour scramble a couple of times, but tofu scramble is the best). Preferably baked scramble, I like it a little crispy.
Beans, refried or baked.
Potatoes. I like hash browns but I'm usually to lazy to make them.
Avocado! Always, always, always.
Sometimes cheese sauce. Isa's cashew queso is the best.
Salsa. I like pineapple salsa, but plain tomato salsa works too.
A lot of hot sauce.
Maybe some greens, like spinach. Or broccoli on the side.

And yes, the bread is extremely important. I made some bb:s the other day with a thick flatbread and it didn't work that great. Thin tortillas is where it's at.

Now I want a breakfast burrito!

While scrambled tofu is awesome (and soyrizo is also amazing), I have to also root for the black beans or pinto beans plus potatoes plus peppers (poblano or bell) plus avocado/guacamole. Sometimes we roast the potatoes with a mix of ancho chile powder, garlic powder, black pepper, salt and olive oil and that is truly delicious.

Also, the scrambled burritos from VSSTD are AMAZING. So nice and creamy with the coconut milk. I always eat them with tons of hot sauce and avocado

This thread inspired me to make a breakfast burrito tonight

Really cheesy scrambled tofu (daiya), tater tots, and some avocado a co worker brought me from his tree. And hot sauce of course.

Man, that was really like a pre vegan breakfast burrito. The tots really did it. Thanks to the suggestion in this thread!

My super lazy breakfast burrito recipe (serves 4, cut it in half to serve 2):

1 block tofu
1 tsp oil
1 c tvp
1 c boiling water
1 jar of your favorite salsa

Heat a pan over pretty high heat (not all the way high, but pretty high) and add the oil. Break the tofu into large-ish pieces and fry it for 10 minutes, flipping once halfway through. (ONLY once. Leave it alone otherwise! It won't brown if you are always fussing at it.) Meanwhile, pour the boiling water on the tvp and leave it alone to reconstitute. When the tofu is done frying, add the tvp. Add the salsa. Mix together. Cook for another 5 minutes or so or til it reaches your desired thickness.

We sub the TVP out for all kinds of things. Beans, tempeh, pre-packaged vegan faux meats, whatever. It's all good. The tofu is key.

Serve on little warmed up corn tortillas with a slice of avocado each.

Well I think potatoes are a good option especially due to their texture but tater tots have a completely different texture. I can't imagine them there.
