I am going to make the pumpkin ziti from Veganomicon for the family Sunday dinner and I am trying to decide if I should double the recipe.

The recipe says it feeds 6-8 and there are 8 adults and 4 children. I'm going to have antipasto style apps, salad, some sautéed veggies, and bread also.

I don't mind having leftovers of course but don't want to go to all the trouble if I could get away with keeping it the way it is. I also don't want to screw it up. The family is definitely not vegan and I want to impress.

Any thoughts or advice? Thanks!

I think with sides you'll be fine. It's big - I made it one Thanksgiving and it served like four people PLUS me for a week after.

that's a good one to impress! i think you'll be ok with enough sides and things. Whenever I have people over and I don't want to make a ton of food, I just make sure to serve a lot of bread so people fill up on that! I think with apps, salad, vegetables and bread you should be ok.

I agree. It makes one very full 9x13 dish - so you should be good with sides and all.

PBZ is one of my favorite things from Veganomicon - I hope you like it!

That's one of my favorite recipes! It's a good one to serve to omnis, and it's hard to screw up.

I'd say as well as lasagna or baked ziti... so, ok? I feel like pasta gets a little mushy when frozen/reheated.
