 Post subject: Eggplant madness!

I discovered a lovely thing this week; Japanese eggplants in bulk at the asian grocery store. Not only, that, but they are selling them super cheap! So I went a little crazy and bought about 40.

Im thinking about making the following:

baba gounoush
muffalettas
eggplant and shitake sautee (already made it--it will also go in muffalettas)
and maybe some mousakka?

I was thinking of stuffing them too--with other veggies and maybe some brown rice.

So what to do with all this eggplant?! Any suggestions?
I know there are some amazing cooks on this forum that can give some great advice, so I will wait!

I echo the curries. In addition to the above, there is a good one in Vegan Eats World with japanese eggplant if you have that. Another recipe that comes to mind is Veganomicon moussaka with pine nut crema.

What we end up doing quite a bit with eggplant is an eggplant sandwich: either grill it or bread and fry, then baking it in the oven with a chunky marinara sauce and mozz, then throwing it all in a sandwich. Its best on garlic bread.

the eggplant chili mole from appetite for reduction is really good and uses 2 pounds of eggplant.

It's seriously one of the best stews I've ever made.

I really like eggplant with kimchi. The melt in your mouth texture of eggplant and soft tofu pair beautifully with spicy kimchi in a Korean stew.

I skin it and slice it length wise then marinate it like a jerky. Usually my marinade is an aminos and liquid smoke base with spices like cayenne so go to your liking on those. Then into the dehydrator but be sure to oil them good first or they sick like crazy to the tray. Use lots of oil. By then they are the size of strips of bacon and I put them in mason jars in the freezer. I use them like crunchy bacon...on sandwiches, crumbled in salad...use your imagination.

Peel it, and saute it in cubes with lots of garlic and olive oil. Add some ground almonds and nutritional yeast, season it, and cook down until it's a thick sauce. Then spread it on pizza instead of a tomato or cheese sauce with your favourite toppings (I like to do roasted field mushrooms and semi-dried tomatoes). It's seriously delicious.

Just an fyi that cooked eggplant, peeled and bagged, freezes really well. When they're cheap, I buy lots and freeze them in twos so I can Baba Ganoush (yes, its a verb in my house) whenever I get the urge.

Baba ganoush is great but don't forget caponata! It's another classic eggplant based spread/appetizer, but it has sweetness and tanginess (I like mine a little less sweet). It's Sicillian and there are about a billion recipes for it online, though it's really easy to make.

Eggplant was on sale here in my area, so last night I made the Lebanese Eggplant Moussaka from Vegan Eats World. SOOO good.

Also, making a roasted veggie pasta later this week, that includes roasted eggplant. I really love roasted eggplant.
