Cans come in 14/15 oz. Most recipes call for a cup. What do you do with the rest of the can?

Toss it into mac and cheese! (I am assuming you're using pure pumpkin and not the pre-sweetened and spiced pumpkin pie mix).

Huh... that's one I'd have never though of. It is indeed pure, unsweetened pumpkin. Do you just toss it in with the other ingredients? When I think savory pumpkin, I tend to think things with ginger or citrus, like in a soup. Mac & cheese and pumpkin sounds like a weird combo to me, but maybe I just need to try it.

I was just wondering this! I like to use 1/4 in oatmeal or use it as a sub for oil in recipes (like banana). I especially like it in pancakes. I'm going to try to make a pumpkin spice latte and look up that cookie recipe!

I'm nervous about using it in baked goods (ok, nervous is an overstatement) because it's not a full cup (it's 0.799 cups if my math is correct) and I'm not confident enough in my baking skills to deviate from exact amounts.

The butternut alfredo uses a cup and a half of the squash, so I don't have enough left over. That Oh She Glows recipe actually looks really good, Tofulish! It's making me rethink my reservations about pumpkin in Mac & Cheese. Pumpkin pie smoothies and pumpkin pancakes sound great too!

(Oh, and in case anyone's wondering where most of the can went, it went into the Best Pumpkin Muffins from the PPK blog and they really are the best pumpkin muffins!!)

I also made the pumpkin muffins from the blog the other day. Than I used some more to make pumpkin cupcakes (using the pumpkin whoopee pie recipe from Chloe's Vegan Desserts). I still had some leftover (my can was like 26oz? or something) so I froze it a little container to use at a later date.

If you don't have a full cup for baking you can sub the rest out with applesauce. When I made the muffins from the blog the other day I used less oil and sugar and threw in a half cup of applesauce and they turned out well so I am sure you could just use less pumpkin and add applesauce. You could always throw the pumpkin in the freezer until you decide to use it. It's also good in a soup with some sweet potato and/or other squashes.

I would freeze it and make a smoothie. Then you don't have to worry about the amount!

I'm actually thinking about doing this. Or at least freezing half of the can upfront so it doesn't become a moldy mess later.

Sometimes I mix it with pie spices and maple syrup, heat it up, and just have a little 1-2 servings of pie filling for dessert or breakfast...also good if you put it in your oatmeal in the morning!

I made some delicious baked pumpkin steel cut oats recently - for something like that it wouldn't matter if you had a whole cup or a little less.

Other than that, I usually divvy up the remainder of the can into a smoothie and give some to the doggy.

I scoop it out onto a tray and freeze so I have a bag full of 4 fl. oz. portions to use in smoothies, oatmeal, or a quick meal of pumpkin/lentil sprouts/legume/scoop of protein powder mixed up into a delightfully tasting nutritious post workout sludge.
