 Post subject: "BAD" recipe time:

I came up with this out the blue the other night--I had to share. Its good.

Vegan 'Bacon Grease':

1 cup refined coconut oil
1 tbs light miso
1 tbs dark miso
1-2 tsp liquid smoke

cook in skillet until everything looks like its "frying" and the miso starts to separate and look a bit curdled.

**You may want to give it a whirl in the blender to break the miso down further, but you do not have to.

Pour into a jar, cool, and use when you want some salty, fatty, smokey-sweet goodness. (Its great in tomato sauce).

FOR PASTA:

Toss a few spoonfuls of VBG in a skillet with a little garlic, chili flakes, ground pepper, and olive oil; when you smell the garlic cooking, remove mixture from heat and toss with hot pasta.

Note: You can toss in some nondairy milk, cashew cream, and peas, and you have Spaghetti Carbonara...

I think so!
Im from the South, so I grew up using the real thing...it (bacon grease) just adds something "extra" you know? I've put the stuff in chocolate for gods sake! I cannot believe how this recipe turned out.
Its so close to the real thing, and does not taste fake in any way. If you try it, let me know what you think!

Why is it a bad recipe? I never cooked with bacon grease as I always hated bacon so I don't know. Sounds interesting for greens as I love greens.

Yes, that's right--I figured I would warn the haters before they read the recipe, so I called it "bad" since it is certainly NOT sprouts and kale! :P

I use to love bacon--I still like the flavor of it in things, so I figured this would be a good sub. And it IS!! I had two bowls of pasta last night because of this stuff...

no particular brand--just make sure to read the ingredients so that it does not contain "dashi", which is a dried fish stock. The ingredients should just say "soybeans, rice wine, salt" or something very close to that.

FYI- I get mine at the asian market where you can buy 2 lb bags of it for about 6 dollars. It lasts a long time and is so much cheaper than buying it in Wholefoods. And the soybeans are GMO free.

It's been more than 40 years since I ate bacon, or used bacon grease. But I remember the first time I realized my mother used bacon grease to fry eggs, I thought "yuk." So maybe I was a latent vegan even then? My memory is it did taste good, but I'm wondering if something similar now would turn my stomach? I really, really hate "Beyond Meat" because it just tastes too real. It gives me heartburn too (maybe psychological?) But I tend to like things that have the seasonings I remember with animal meat (like smokey and maple,) so maybe....

So, someone try this with an omni and see what they think!

Ive only tried it on omnis--they love it--try it--you will be surprised by this! Its not sick/gross like bacon grease can be--its good.

I have never had bacon grease, and only eaten bacon once on kind of a dare, and this recipe is really appealing to me. It seems like it'd also be a good thing to fry marinated tempeh bacon in.

Speaking of "bad" foods, what are your favorite gravy recipes? I never ate gravy pregan (not really a thing in my family's cooking), but it's so satisfying in the winter.

I recently made beer gravy:
Fry some onions and garlic, add a handful of flour for browning. When it looks golden, add 1/2 cup of broth, let it thicken (add more flour if needed), then add a pint of beer in very small batches to get a nice beer reduction going. Salt and pepper to taste.
Really hits the spot.

Gravy is one of my favorite food groups. I love all kinds, but generally use the Vegan Diner recipes these days.
