Looking for simmer sauce recipes. I guess this could be most any sauce that would be good for the main flavors of a dish. I love Trader Joe's Thai Curry Simmer Sauce and keep a jar around for a quick dinner-saute up some veggies & tofu, add sauce, and done.

For any Thai simmer sauces I keep a can of coconut milk and some curry paste around. That's basically all some of the simmer sauces are, plus you get about two dishes out of the paste. For Indian style ones I imagine you could cook a bunch of diced onions, garlic, and ginger with the spices, freeze that and add to veggies with either coconut milk or canned tomatoes.

i just did a bolognese recipe yesterday..its a sauce that is filled with veggies and is usually thrown on top of spaghetti..
