Go for it! It will probably be fine. Is it a strong flavored olive oil? You could try subbing part apple sauce if you have it. Maybe make half a recipe if you are worried it won't be good.
ps: totally unrelated, but i just noticed your location and i strongly approve.

You'll be fine. I've subbed olive oil in any number of things. I wouldn't sub a fancy cold-pressed one, but just your normal cooking one will be fine.

So m husband made poppy cake once when I was out. I came home and saw two loaves of green seeded bread on the counter. He had used two cups of extra virgin olive oil. And that's about all they tasted like, too.

yeah, like everyone else said, as long as it's a light olive oil it works great. it's all I use for baking, actually. bonus that it's much less expensive than extra virgin.

I was really suspicious of olive oil in baking. But then I went to make the gingerbread cutouts from the blog and realized I was out of canola. So I risked it and used the light olive oil I had, and they came out just fine. It is totally snowed in, too cold to go out, and cook with what you have weather!

Cheap olive oil is usually comprised of other oils!

Obviously I can't speak for everyone, but when I referred to cheapo light olive oil upthread, I meant pure olive oil. It's light in taste and much cheaper than extra virgin because it's not from the first press of the olives.

i like to bake some stuff with extra virgin olive oil. dependso n the recipe, but sometimes it adds a really nice richness or just sorta classy taste to your food.

This peanut butter cookie recipe is gooood http://www.101cookbooks.com/archives/pe ... ecipe.html
