In my search for red pepper paste (I'm allergic to tomatoes and seeking a good substitute for tomato paste) I came across this mysterious substance:

I suppose I could just try it in any recipe that calls for tomato paste - and if it adds a lot of heat, so much the better as I am a spice fiend - but has anyone tried this stuff before? Any suggestions or wild ideas?

I would assume this is more like a chili paste than anything that would be like tomato paste, which is totally mild. But I'm also a spice wimp and have never seen this product, so don't take my word for it. I would think it would be interesting in spicy dishes -- I just wouldn't try to make pizza sauce out of it or add it to minestrone, for example.

yeah, I just tried some and it's quite hot, but delicious!! I added a spoonful to the broth for some black eyed peas & collards. I think I might try it in a curry next. It has a nice flavor, spicy with a little savory depth.

I think there is a recipe in Vegan Eats World that calls for this stuff.

(looking it up...)

Nope, VEW calls for (milder?) ají amarillo paste. Maybe you can try making the Andean Ají Bean Stew with this paste though, if you like heat. Unfortunately, the recipe also calls for a can of diced tomatoes. I bet you can substitute with broth or pumpkin puree or something, since it is quite a thick flavorful recipe and the tomatoes blend in with everything else.

Terry says: 'The ají amarillo chile has slightly less hat than the jalapeño and is used in Peruvian and some Bolivian cuisine. This ají (the South American term for chile, pronounce ah-HEE) is commonly used in the form of a paste.'

wow, thank you Cornelie! I don't have that cookbook but I am going to look into it. The market where I found this paste had a few other varieties and I'll have to check back and see if they have ají amarillo.

Yeah, my aji amarillo paste is also Goya and the jar looks exactly the same. It's a very mild paste, I'm sure, compared to the one you have. But now I want to try yours next!

I recommend it! It actually reminds me of sriracha, except not quite as sweet. In fact maybe I should transfer it to a squeeze bottle so I can use it just like sriracha...

What do you like to use the amarillo for, beethecookie? :)

I bought it to use in Vegan Eats World's Andean Bean Soup, which specifically calls for the paste. Now that I have an open jar, I do all kinds of things with it! Stir it into chili, throw it in a tofu scramble, use it anytime a recipe calls for peppers. If I'm feeling too lazy to chop up bell peppers, this is a good alternative. It gives dishes that mild pepper flavor without any work!
